Sweet Potato Chips, yummy!

 

Now I knSweet potato chipsow you’re going to tell me that McCain or any other chip manufacturer does a brilliant range in sweet potato chips. Well done McCain or any other chip manufacturer! However, I have to ask have you looked at the list of chemicals they put into their food to preserve them and keep them on the shelve longer. Next time you are in the frozen foods isle at the supermarket take a look at the list of ingredients and then tell me they still taste delicious.

My recipe will take you about the same amount of time as it does to go to the freezer open up that bag and spread those chemical filled chips on your baking tray. Plus this recipe should be about the same price as those McCain things too. All I ask is that you give it a go and I promise you will be kissing goodbye to those frozen ones.

Sweet potatoes are another staple in this house, they are an inexpensive item to buy and they have bucket loads of flavour. The biggest bonus of a sweet potato is they are not on the dirty dozen list. Which means they are not sprayed in pesticides so therefore we don’t need to worry about buying them organically.

However, if you do not have sweet potatoes to hand you can always use normal potatoes. They are also an inexpensive item to buy and still have health benefits but not as many as the sweet potato. Although they are on the dirty dozen list which means they are sprayed in pesticides which can cause cancer. If you have the time why not try growing your own. It’s one way to ensure that we do not get the cancer causing chemicals in our bodies. This is on my to do list for this year.

The next ingredient in this recipe is rosemary and this gives these chips extra flavour. Rosemary was used to help stomach problems in the past but it can also help to prevent brain aging, improve your mood and relieve stress. It is a great herb for the immune system as it contains antioxidants that fight against disease.

Garlic has been proven to be a powerful antibiotic. The bacteria in the body does not appear to resist the garlic where many modern pharmaceutical antibiotics do. This means it has very positive health benefits for the body.

Smoked paprika is a very versatile spice. It is great with chicken, fish, cottage cheese, cauliflour and potatoes. It comes from the pepper family and in other countries there are many different varieties. The best benefit of this spice is that contains plenty of minerals and vitamins which include vitamin A, vitamin E, vitamin B-6 and iron. So it’s a great addition to any meal.

Coconut oil is my final ingredient in this meal. I use it in almost everything and it makes these chips taste yummy. Coconut oil is an oil that you can heat to a high temperature and it won’t lose it’s composition. This means that even at high temperatures you still gain all of the essentials as you would if it was served to you in the jar. A great oild to cook chips in.

Serves 4

Equipment needed

  • Knife
  • Chopping board
  • Teaspoon
  • Tablespoon
  • Baking tray

Ingredients

  • Sweet potatoes x 2 large (600g)
  • Fresh Rosemary x 4 sprigs
  • Garlic x 8 cloves
  • Smoked Paprika x 2 tsp
  • Coconut oil x 2 tbsp.

Method

  • Preheat the oven to 180º and at the same time put the baking tray in.
  • Next peel the sweet potatoes and cut length ways, into chip shapes.
  • Once the oven is preheated take out the hot baking tray and add the coconut oil. If the tray is hot enough the coconut oil should melt. Try to distribute the oil evenly on the base of the tray.
  • Then add the potato chips. Toss them until covered in the oil.
  • Sprinkle the smoked paprika over the potato chips and toss again.
  • Finally throw in the garlic and add the rosemary sprigs.
  • Cook for about 30 – 35 minutes or until they start to turn a golden brown colour.

As I have mentioned in a previous post this meal is great with my spicy bean burgers. If you don’t have much time you can peel and chop the potatoes the night before or in the morning. I have bowls with lids on so I leave them in the bowl with water in the fridge. Also, if you don’t have enough sweet potato you can always throw in some white potatoes too. It honestly takes me no time at all to whip up these recipes and they are normally eaten very quickly by my little family too.
