Salted Caramel and Pecan Flapjack

My husband Howard, son Ted and I all love dates. We really enjoy eating them as a sweet treat. Recently I decided to start cooking with them in my recipes. In the past I have made Date Balls but I have never really baked them in a cake or biscuit before. We always have a glass jar filled with delicious Medjool dates in the fridge.  One day, as I was looking for other ingredients, I saw the dates in their glass jar and I decided to start thinking about what I could make with them.

Medjool dates are known as the king of all fruits and the fruit of kings. They are a brilliant substitute for sugar as they are just as sweet with fewer calories. Plus they contain lots of healthy fibre, vitamins and minerals. Dates are high in disease fighting antioxidants and they can help to promote brain health.

As my husband loves flapjacks I decided to start by making a salted caramel version. I made it with Ghee but to make it vegan you could use coconut oil or a vegan margarine. The ground pecans I threw in to the mixture add extra bulk, but again, you could add walnuts or almonds if you wish. My husband and I loved this sweet treat and we think you will too.

Makes 12 – 16 Flapjacks

Equipment

  • Bowl x 1
  • Large mixing bowl
  • Colander
  • Nutribullet or blender
  • Teaspoon
  • Square baking tin
  • Wooden spoon
  • Grease proof paper

Ingredients

  • Medjool dates x 150g
  • Hot Water x enough to cover the dates
  • Oats x 200g
  • Pecans (ground or chopped) x 100g
  • Chia seeds x 50g
  • Baking powder x 1 tsp
  • Maca powder x 2 tsp
  • Salt x 1 tsp
  • Coconut sugar x 150g
  • Ghee or coconut oil x 100g
  • Milk x 100mls (your choice)

Method

  • Remove the stones from the dates and put into a bowl.
  • Boil the kettle and pour over enough water to cover them.
  • Leave to stand for 5 minutes.
  • Meanwhile, add the oats, pecans (chopped or ground), chia seeds, baking powder, maca powder and salt to the large mixing bowl.
  • Mix all these ingredients together.
  • After 5 minutes drain the dates through a colander.
  • Now add the dates, milk (your choice) and the ghee or coconut oil to the nutribullet or blender.
  • Blend these ingredients together.
  • Pour these ingredients into the mixing bowl and mix everything together.
  • Once all the dry ingredients are covered in the wet ingredients, set aside.
  • Next pre-line a square baking tin with grease proof paper.
  • Put the flapjack mixture into the baking tin and flatten with the wood spoon.
  • Put into the oven for 20 – 25 minutes.
  • Once it’s golden brown, remove from the oven and leave to cool for a good 30 minutes.
  • When it’s cool enough to touch, remove from the baking tray and leave until completely cooled.
  • Cut into squares, serve and enjoy.

Salted Caramel and Pecan Flapjack

Salted Caramel and Pecan Flapjacks are a delicious treat that the whole family can enjoy. They are delicious with a nice cup of tea or coffee as a mid morning or afternoon snack. These flapjacks could also be enjoyed as a lunch or after dinner treat too or maybe even as an on the go breakfast. All the ingredients in this dish are freezable so they could be frozen and eaten later. My little family really enjoyed them and they didn’t last long in our house. However you decide to eat these flapjacks, as  always, enjoy.
