Chicken Dipper with Sweet Potato Pancake Baps and Homemade Baked Beans and a Sweet Chilli Sauce

Saturday is the day I like to experiment in the kitchen. We normally spend the afternoon in the house. My husband and son will play games on the TV in the living room and I will test my ideas in the kitchen. I’ve said it before and I’ll say it again I feel like the nutty professor when I’m in the kitchen inventing. 

When I lived at home with my parents my Dad would occasionally make burgers. I love nothing more than a big juicy burger on a Saturday night. It was always a favourite of mine.  

For me, it was always about the soft bun that surrounded the juicy burger. It was simply the best taste. Since discovering I have a gluten allergy I can no longer eat a burger with a bun. I know you can get gluten free buns but I’m never sure what they wash the gluten out with. Therefore I tend to stay away from these products. 

However, I suddenly thought the sweet potato pancakes that I make could be a great alternative. So I decided to leave out the cinnamon and turn them into savoury pancakes. It was very simple and easy to do. Plus the results were amazing and my little family really enjoyed my chicken dippers burgers. Well worth a try.

Serves 4 

Equipment needed

  • Potato peeler
  • Sharp knife
  • Chopping board
  • Colander 
  • Saucepan
  • Blender
  • Mixing bowl
  • Whisk
  • Tablespoon 
Chicken Dippers with Sweet Potato Pancake Baps and a Homemade Ketchup and Sweet Chilli Sauce and Salad

Ingredients for the pancakes

  • Sweet potato x 200g
  • Gluten free oats x 200g
  • Baking powder x 1 tsp
  • Oat milk x 300mls (or a milk of your choice)
  • Eggs x 2 

Method for making the pancakes

  • Peel the sweet potato and cut into cubes. 
  • Pour water into the saucepan and put on a high heat. 
  • Place the sweet potato cubes into the colander and put it on top of the saucepan to steam them. 
  • Make sure there is no water touching the bottom of the colander. 
  • Then steam the potato until it’s soft enough to blend. 
  • Put a fork in it and if it falls off it’s cooked. 
  • Meanwhile, blend the gluten free oats. 
  • Pour these into the mixing bowl along with the baking powder and mix together. 
  • Once the potato is cooked, pour into the blender along with the milk. 
  • Now pour this over the oats and whisk these together. 
  • Add the eggs and whisk until it looks like pancake mixture.
  • Next put a frying pan on a high heat and add oil. 
  • Scoop enough pancake mix to make a good sized pancake. 
  • Cook the pancake and then repeat the process until you have made about 8 – 12 pancakes. 
  • Leave them to cool on a rack.

  • Nutribullet or food processor
  • Sharp knife

  • Small bowls x 3
  • Large bowl
  • Fork
  • Baking tray
  • Tablespoon
  • Teaspoon
Chicken Dippers with Sweet Potato Pancake Baps


  • Chicken Breasts x 500g
  • Ground flax seed x 100g
  • Eggs x 2 medium
  • Brown rice flour x 3 tbsp
  • Mixed herbs x 1 tsp


  • Preheat the oven to 180°C and put the baking tray in.
  • Start by mixing the ground flax seed and dried mixed herbs in a bowl. 
  • With the sharp knife on the chopping board, cut the chicken breasts length ways into thin strips.
  • Now crack the eggs into another small bowl and whisk with the fork.
  • Then in the final bowl put 3 tbsp of brown rice flour.
  • Dip a piece of the chicken into the brown rice flour covering the chicken.
  • Then dip the same piece into the egg covering the chicken.
  • Finally dip it into ground flax seed and mixed herb mix covering the chicken.
  • Repeat the process with the rest of the chicken putting it into the large bowl.
  • It’s a very messy job but a fun one and remember to put any leftover flour, etc into the bin. They will be contaminated with chicken.
  • Once all the chicken is covered in the coating, transfer the chicken dippers from the bowl to the baking tray.
  • Put the baking tray into the oven and cook for 25 – 30 minutes or until the coating is golden brown.
  • Once cooked, plate the food up, serve and enjoy.

Method for putting together the burger

  • Put one of the pancakes on the plate. 
  • Then place three or four chicken dippers on the pancake. 
  • Spoon over sweet chilli dipping sauce (recipe coming soon) or tomato ketchup
  • Finally place another sweet potato pancake on top. 
  • Any leftover pancakes can be frozen or eaten in this meal. 
  • Serve with a salad or my homemade baked beans and enjoy.

Chicken Dippers with Sweet Potato Pancake Buns is a simple dish but it is quite time consuming. My husband, Howard and son Ted, love this meal. I tested it a couple of times on my little family. When I told my husband he was going to have to eat this meal again he was very happy. He said the meal was delicious and he really enjoyed it. So it was a winner in this house. However you decide to eat this dish, as always, enjoy.
