Slow Cooked Creamy ‘No Cream’ Chicken Stew

Sundays are lazy days in our house. During the week, in normal circumstances, we are normally always on the go. In the past few months we have slowed down a lot due to lock down. Although, now life seems to be going back to normal I find the weeks are starting to get busy again. We always try to have a lazier day on a Sunday.

With a lazy day comes a very easy meal most of the time. I really enjoy using my slow cooker during the week but on weekends I love to use it too. For me a slow cooker makes a meal seem like the fairies have been and cooked the dinner. I like to prepare the ingredients the night before and leave it in the slow cooker. In the morning all I have to do is switch the cooker on and that’s lunch or dinner done.

Slow Cooked Creamy ‘No Cream’ Chicken Stew

Serves 4

Equipment

  • Sharp knife
  • Chopping board
  • Slow Cooker
  • Teaspoon

Ingredients

  • Cashew nut cream cheese x 100g
  • Milk x 500ml (your choice)
  • Chicken stock or bone broth x 500mls
  • Chicken breasts x 500g
  • Leek x 1
  • Butternut squash x 1 small
  • Carrots x 2
  • Courgette x 1 large
  • Yellow pepper x 1
  • Potatoes x 600g
  • Kale, spinach or green beans x 2 handfuls
  • Rosemary x 4 sprigs
  • Bay leaves x 2
  • Dried oregano x 1 tsp
  • Garlic Granules x 2 tsp
  • Salt and pepper to taste

Method

  • Peel and slice the carrots, courgette and butternut squash.
  • Remove the top and bottom from the leek and slice it.
  • Slice the top from the pepper and remove the core and stalk.
  • Cut the pepper into small 1 centimetre pieces.
  • Now peel and cut the potatoes into 1 inch pieces.
  • Put these ingredients into the slow cooker.
  • Next cut the chicken into 1 inch pieces and put this into the slow cooker.
  • Add the cashew nut cream cheese, milk (your choice) and the chicken stock or bone broth.
  • Sprinkle over the garlic granules and oregano and add the rosemary sprigs and bay leaves.
  • Stir all of these ingredients together with the wooden spoon.
  • Put the slow cooker on low for 8 hours or on high for 4 hours.
  • Thirty minutes before the end, add in the spinach, kale and green beans.
  • Finally serve and enjoy.

Slow Cooked Creamy ‘No Cream’ Chicken Stew was a meal that everyone enjoyed. My son Ted, who can be particular about what he eats, ate this dish. Nowadays, Ted rates my food and I think I scored an 8/10 for this one. If Ted enjoyed it then I’m sure everyone in your family will too. The bonus is that all of the ingredients are freezable so please feel free to cook double and freeze it. I gave our second helpings to my mum for her Sunday dinner.
