Smoked Salmon and Avocado Sushi

My son Ted has been asking me for months to make Sushi. Ted has never tried it and I am a bit reluctant to buy in from the supermarket as I know they used refined sugar to sweeten it. Many years ago I would of quite happily brought a packet of Sushi from the shops. Nowadays, as well as giving up refined sugars I also have a gluten allergy. Unfortunately, I had to stop buying it from the supermarket because it can be packed in factories where gluten is used.

Until now I had never made Sushi at home before. I had been meaning to make it for quite some time when Ted suggested it. A little while ago I had brought all of the ingredients and the equipment (a rolling mat) as well. Our local shop has an Asian section that sells a lot of weird and wonderful treats from abroad.

Therefore I already had what I needed to make this delicious dish. All we had to do was buy the smoked salmon. Also on my packet of sushi it suggested using white sugar and rice wine vinegar. I decided to use coconut sugar and apple cider vinegar. It worked just as well. It was great fun making this with Ted too.

Equipment

  • Saucepan
  • Tablespoon
  • Sharp knife
  • Chopping board
  • Sushi rolling mat

Ingredients

  • Smoked salmon x 300g
  • Avocado x 1 large
  • Sushi rice x 300g
  • Nori rolls x 1 pack
  • Coconut sugar x 2 tbsp
  • Apple cider vinegar x 2 tbsp
  • Salt x 2 pinches
  • Tamari or soy sauce x 2 tbsp

Method

  • Cook the rice as per the sushi packet instructions.
  • While to rice is cooking slice the smoked salmon thinly into strips.
  • Then slice the avocado thinly.
  • Set these two ingredients aside.
  • Instead of using the rice wine vinegar and sugar that it suggested on the packet I used apple cider vinegar and coconut sugar.
  • Now stir the vinegar and coconut sugar into the sushi rice.
  • Lay a sheet of nori on top of the rolling mat lengthways.
  • Spoon on the sushi rice lengthways on one side of the nori.
  • Depending on the size of the nori will depend on how much rice you can fit in the roll.
  • Place the strips of smoked salmon and avocado next to the rice.
  • Now pick up one end of the rolling mat and roll the nori and rice.
  • It took me a couple of goes to get this right but eventually I got there.
  • Slice the rolls into two or three pieces
  • Repeat this process until all the rice is used up.
  • Pour the tamari or soy sauce into a bowl and use as dipping sauce.
  • Serve the sushi and enjoy.

Smoked Salmon and Avocado Sushi was a big success in our house. I discovered, after making the Sushi, that my husband Howard had never eaten shop brought Sushi. Howard had only ever eaten it from restaurants in London. Both my Howard and Ted really enjoyed this dish. Ted didn’t really like the nori roll which was a bit disappointing for me but he loved the rice and smoked salmon. Howard and I ate the lot and enjoyed every last bit. Sadly you can’t freeze Sushi so we had to eat it all up. It’s a great meal to make with children as it’s very hands on and they can help with the rolling.
