
For many years on Christmas Eve we would eat a delicious fish dinner. Our favourite used to be salmon but sadly my son Ted, who is 11, isn’t a fan nowadays. The only fish he likes are prawns and tuna. Therefore instead of oven baked orange, ginger and soy salmon I’m making a prawn version. Which I have to be honest was just as tasty. It’s definitely the dish I will be serving on Christmas Eve and I hope you will too. Below is a video and recipe for you.

Equipment
- Sharp knife
- Chopping board
- Fork or juicer
- Small mixing bowl
- Tablespoon
- Teaspoon
- Large saucepan
- Stirring spoon
Ingredients for the sauce
- Orange x 1
- Tamari or soy sauce x 1 tbsp
- Honey x 1 tablespoon
- Ground ginger x 1 – 2 tsps
Method
- Slice the orange in half and squeeze the juice from it with the fork or juicer into the small mixing bowl.
- Add in the tamari or soy sauce and ground ginger.
- Mix these ingredients together.
- Set the bowl aside.
Ingredient for the stir fry
- Prawns x 500g
- Spring onions x 6 – 8
- Garlic x 2 cloves
- Carrot x 1
- Water chestnuts x 1 tin
- Bamboo shoots x 1 tin
- Green beans x 1 handfuls
- Salt and pepper to taste
Method for the stir fry
- Cut the top and the bottoms from the spring onions.
- Slice the onions into half centimetre.
- Squash the garlic with the blade of the knife.
- Remove the skin and then slice the cloves.
- Peel the carrots and cut in half.
- Then slice the carrot lengthways.
- Put a large saucepan onto a high heat on the hob.
- Add oil to the base of the pan.
- Wait for the pan to heat up and add in the spring onions.
- Once the onions start to soften add in the garlic and fry for a further 30 seconds.
- Next add in the carrots, water chestnuts, bamboo shoots and green beans then fry for a further 2 minutes or so.
- If using uncooked prawns add them into the pan and fry until they start to turn pink.
- It should take around 3 – 4 minutes or so.
- If using cooked prawns add in and let them heat through for a minutes or so.
- When the prawns are cooked or heated through pour over the sauce and stir all the ingredients together.
- Serve with rice or noodles and enjoy.

Orange, Ginger and Soy Prawn Stir Fry – 24 Days of Christmas was a yummy meal we really enjoyed. It was easy to prepare and cook. The ingredients in this meal, if you are using uncooked prawns, are freezable. Personally I think a stir fry tastes better cooked fresh. Plus the leftovers are really yummy too.
