Simple Onion Chutney

Many years ago my mum had an allotment. For those of you that don’t know, an allotment is a piece of land you normally rent from the local authority to grow fruits and vegetables on. Mum loved this piece of land. When she first rented it the plot was a mess. There were weeds and bushes growing all over the place.

My mum is not the greatest at tidying up and I did wonder whether she would ever clean up her plot of land. When I went back to visit the land six months later it was amazing. Mum had cleared the patch and she was growing a variety of fruits and vegetables. She had so many different vegetables she didn’t know what to do with them.

That’s when I suggested making chutney with the onions she had grown. Mum thought this was a brilliant idea. When she gave up the piece of land I was very upset. I had enjoy making chutney with the fruits of mums labour. This year mum decided to grow onions in her back garden and I’m pleased to say I got to make my delicious chutney again. Plus we all enjoyed this chutney and we hope you will too. Below is a video and recipe for you.

Equipment

  • Sharp knife
  • Chopping board
  • Saucepan
  • Stirring spoon
  • Sterilized glass jar

Ingredients

  • Onions x 1 kg
  • Garlic x 6 – 8 cloves
  • Olive oil x 2 tbsps
  • Coconut or brown sugar x 100g
  • Apple cider vinegar x 200g
  • Salt x 1/2

Method

  • Peel the onions and the garlic and slice them.
  • Put the large saucepan onto a high heat on the hob.
  • Add the oil to the base and let the pan heat up.
  • Once the pan is hot add the onions and fry until they start to soften.
  • When the onions have softened add in the garlic.
  • Fry for a further few minutes or until the garlic starts to turn golden brown.
  • If the ingredients start to stick to the base of the pan turn the heat down and add a little water.
  • Next add in the sugar and fry for a further few minutes.
  • The sugar will hopefully start to melt and mix in with the onions.
  • Pour over the apple cider vinegar and turn the heat back up on the hob.
  • Bring all the ingredients to the boil and add in the salt.
  • Turn the heat down and leave to simmer for a good 10 minutes or until the ingredients become thick and sticky.
  • Once the chutney ingredients are thick remove from the heat and leave to cool completely.
  • When the chutney has cooled completely put it into the sterilized glass jar.
  • Put the lid on tightly and store in a cool, dark place for at least a week.
  • After a week or so, open and serve then store in the fridge.
Simple Onion Chutney

Simple Onion Chutney was delicious. I had it with cheese and my husband ate it in a cheese sandwich. I gave a jar to my mum who really enjoy it as well. My mum has the strangest tastes in food and I think she ate it with scrambled egg. To be honest, I’ve not tried this one but when I make more I will give it a go. The best part about making chutney is it will last forever in the fridge. However you decide to eat this dish, as always, please enjoy. Thank you xxx
