
The summer is nearly over and the winter is on it’s way again. For me, I will be going back to warming foods during the colder months. The other day I discovered I had leftover fruit from another recipe. Therefore I decided to make it into a fruit salad. I love a cold fruit salad on a warm summer’s day. It’s like eating a big bag of sweets but healthier. Once winter is officially here I will kiss goodbye to this dish but I know it will be back again next year.

Equipment
- Sharp knife
- Chopping board
- Large mixing bowl
Ingredients
- Melon x 1/4
- Pineapple x 1/2
- Mint x 1 handful
- Lime x 1 (juice)
Method
- Slice the watermelon in half.
- Then into quarters and cut slices from the quarters.
- Cut the skin away from the flesh and slice into bit size cubes.
- Discard the flesh and put the melon cubes into the large mixing bowl.
- Next prepare the pineapple.
- Place the pineapple on it’s side and cut the top and the bottom from the pineapple.
- To remove the skin slice downwards, along the curve of the pineapple.
- Cut deeply enough to remove the eyes.
- Now slice down the centre of the pineapple.
- Cut the two halves into quarters.
- Next remove the core by slicing the hard piece of pineapple at the tip of the quarter.
- Continue to do this to the other three quarters.
- Then slice the quarter length ways in half.
- Finally slice the long pieces of pineapple widthways into 1 centimetre pieces.
- Place the pineapple pieces into the large mixing bowl.
- Put the mint leaves in as well.
- Slice the lime in half and squeeze the juice from it using the fork or juicer.
- Carefully toss these ingredients together.
- Then serve and enjoy.

Zesty Lime Tropical Fruit Salad is a yummy way to eat fruit. It can be made and stored in the fridge for up to 5 days. You can also freeze the fruit salad for another occasion as well. It makes a great side to breakfast or even a yummy dessert and snack too. The salad could be eaten with cream, ice cream or coconut cream and maple syrup.
