
When I make cookies/biscuits they are normally always hard. Therefore I felt I needed to try a soft cookie. We have a lot of almond flour in the house at the moment. I know that when I have used this type of flour in the past it tends to make everything very soft. I realised this would be a good flour to bake a soft cookie with. These were very well received by my family and they thought it would be a good idea to share the recipe with you. Below is a video and recipe for you.

Equipment
- Large mixing bowl
- Stirring spoon
- Teaspoon
- Chopping board or plate
- Baking tray
- Cooling rack
Ingredients
- Almond flour x 200g
- Coconut sugar x 100g (or a sugar of your choice)
- Baking powder x 1 tsp
- Eggs x 2
- Vanilla extract x 1 tsp
- Salt x 1 – 2 pinches
Method
- Put the almond flour into the large mixing bowl.
- Add in the baking powder, sugar and salt.
- Mix these ingredients together.
- Make a well in the middle of the ingredient.
- Crack the eggs and place them in the well.
- Pour in the vanilla extract and mix these ingredients together until you form a dough ball.
- The dough will be slightly wetter than a biscuit dough.
- Make sure to dampen your hands before you make the cookies/biscuits to stop the mixture from sticking.
- Pick up a piece of the mixture and roll it into a ball between your hands.
- Continue until all of the dough has been used.
- You may need to dampen your hands a couple of times during this process.
- Once you have made all the dough balls put them onto a chopping board or plate and place them in the fridge for half an hour or so.
- The cookies/biscuits will harden and glue together better when in the oven.
- Preheat the oven to 200°C or gas mark 5.
- When the oven is preheated transfer the cookies to a pre lined or greased baking tray.
- Squash down the dough balls a little bit with your hands.
- Place the tray into the oven for about 12 – 15 minutes or until they are golden brown.
- Remove from the oven and leave to cool.
- When they are cool serve and enjoy.

Soft Almond Flour Cookies were very well received by my family. They were easy to prepare and cook. Plus they were yummy. I served them with chocolate cashew nut cream and strawberry coulis to my family. Everyone enjoy this dessert and plates were cleaned by the end of the meal. These would be tasty on their own or with a cup of tea or coffee. The cookies could be given as a present as well. Plus they make a great dessert or snack too.
