
My little family can be very fussy when it comes to vegetables. Therefore I’m always trying to play hid the vegetables. I have cooked vegetables in so many different dishes. I never thought I’d be putting courgette (shh) into a scone but it worked. In fact it worked so well no-one suspected courgette in their roll. Plus they were also very tasty as well. My husband Howard and son Ted loved them and we hope you enjoyed them too. Below is a video and recipe for you.

Equipment
- Sharp knife
- Chopping board
- Large mixing bowl
- Tablespoon
- Grater
- Teaspoon
- Mixing spoon
Ingredients
- Almond flour x 200g
- Courgette x 1 small
- Baking powder x 1 tsp
- Cheese x 100g
- Eggs x 2 large
- Salt to taste
Method
- Pre-line a baking tray with grease proof paper and set aside.
- Grate the cheese and put this into the large mixing bowl.
- Add in the almond flour, baking powder and salt to taste.
- Now grate the courgette and add this to the mixture.
- Mix the grated courgette around the bowl.
- Once the courgette is mixed in add in the eggs and mix again until all the ingredient form a dough ball.
- Dampen your hands and split the mixture into 2, 4, 6 or 8 equal parts.
- Then form a burger or bun shape in your hands.
- Once the shape has formed place it on the pre-lined baking tray.
- Put the tray into the oven and cook the scones/buns for about 12 -15 minutes or until golden brown.
- Remove from the oven and leave to cool.
- Then serve as a bun for a burger or as a roll for soups or stews and enjoy.

Cheese and Courgette (Shh) Scones or Rolls were a hit with Howard and Ted These scones or rolls could be eaten with main meals like soups and stews. My son Ted likes to eat these rolls with cheese and ham in as an after school snack. All the ingredients are freezable so I made a batch and froze them for another occasion.
