Apple Jonathan Cake

So my husband has been asking me to make an Apple Cake from, what feels like, the day we met. Finally, after nearly ten years of being together I got around to trying it. To be honest, I was slightly afraid to make it because his mother used to make him this cake when he was a child. So I didn’t want to ruin his memory of it. Thankfully he informed me after I had made it that he couldn’t really remember what his mothers tasted like and that mine was delicious. Phew!

My apple cake I don’t think is the same as my mother in laws. (I had a lengthy discussion with my husband about it.) Although it’s delicious and the reason I know is my little family ate nearly a whole cake in a few days. So well worth a try! Below is a video and recipe for you. .

Equipment needed

  • Food Processor (optional)
  • Apple corer
  • Slicer
  • Mixing bowls x 2
  • Whisk
  • Cake tin
  • Baking paper
  • Spoon
  • Skewer

Ingredients

  • Wholemeal flour or ground gluten free oats x 300g
  • Eggs x 3 large
  • Coconut oil x 125g
  • Maple syrup or coconut sugar x 125g
  • Baking powder x 3 tsps
  • Cinnamon x 1 tsp
  • Nutmeg x 1/4 tsp
  • Cloves x 1/4
  • Apples x 4 eating apples

Method

  • Preheat the oven to 180°.
  • Start by weighing and measuring the ingredients.
  • If using gluten free oats then put them in the food processor and blend them until they resemble a flour.
  • It should only take a few minutes
  • Mix together the flour, baking powder, cinnamon, nutmeg and cloves.
  • Next whisk the eggs and the sugar together and add to the flour mixture.
  • Whisk all the ingredients together until a thick, liquid is formed.
  • Then add the coconut oil and whisk again.
  • Set the cake mix aside.
  • Core the apples and then slice them thinly.
  • Line the cake tin with the baking paper and spread the sliced apples on the bottom.
  • Spoon over the cake mixture and put it into the oven for 25 – 30 minutes.
  • Once the cake is cooked you can put a skewer into it and if it comes out clean the cake is cooked.
  • Leave to cool completely.
  • Once cooled serve with yogurt and honey or coconut cream and maple syrup.
