
Now I realise it’s still only January but in recent days I have been missing the summer. Does anyone else feel like that? Don’t get me wrong I enjoy snuggling under blankets in winter and getting cozy. However when it’s another cold, wet, miserable day I do long for a wee bit of sunshine.
As I can’t get the sunshine outside I decided to bring it in with these burgers. Burgers make me think of long, hot summer days where we enjoy the sunshine and get together with friends and family. So I had to make these yummy burgers and they were lush even in January.

Equipment needed
- Sharp knife
- Chopping board
- Tablespoon
- Teaspoon
- Food processer
- Frying pan
Ingredients
- Raw prawns x 500g
- Spring onions 4 – 8
- Carrot x 1 small
- Almond flour x 2 heaped tbsps
- Tamari x 1 tbsp
- Eggs x 2 medium
- Dried mixed herbs x 1 tsp
- Salt and pepper to taste
Method
- Remove the tops and the bottoms from the spring onions.
- Slice the flesh of the onion and set to one side.
- Peel the carrot and grate it.
- Put the prawns into the food processor and add in the spring onions, grated carrot, almond flour, tamari, eggs, dried mixed herbs and salt and pepper to taste.
- Blend all of these ingredients together.
- Once these ingredients are blended together split the mixture into eight burgers/patties.
- The mixture will be very wet but that is normal.
- Make sure the patties are flat as they won’t cook in the middle when fried.
- Put the burgers/patties onto a plate and store the plate in the fridge for up to 6 hours or overnight.
- Place a frying pan on the hob and put it onto a high heat.
- Add oil to the base of the pan.
- Wait for the pan to heat up and add in the burgers.
- Fry on each side for a couple of minutes.
- Keep flipping the burgers over until they are golden brown.
- Try not to turn the heat down as it won’t cook the middle of the burgers.
- That’s why it’s important to keep flipping them over so they don’t burn.
- Once they are cooked remove immediately from the pan.
- Then serve with chips and salad.
- Finally enjoy.

Simple Prawn Burgers were a big hit in our house. My husband Howard and son Ted gobbled these burgers up. These burgers are easy to prepare and cook. They could be made in advance of a meal and frozen for another occasion. As long as the prawns haven’t been frozen already. The burgers can simple be defrosted overnight and fried in the pan.
