
My husband Howard loves a biscuit or cookies. Howard’s favourites are the Gingernuts I made a long time ago. He will often ask when I’m going to make some more. As Howard is my lover I decided to treat him to a jar for valentines day. Only this time they weren’t just ginger. Of course I had to try other ingredients in his favourite biscuit.
My lover, Howard will often ask me not to tamper with the recipe but I can’t help myself. Just like I couldn’t help myself when I got to know him too!!! Howard thankfully thought these were yummy and I hope whoever you decide to share them with thinks the same. Below is a video and recipe for you.

Equipment needed
- Blender
- Teaspoon
- Tablespoon
- Mixing bowl
- Electric whisk
- Mixing spoon
- Baking tray
- Cooling rack
Ingredients
- Gluten free oats / oats x 200g
- Rice flour or plain flour x 100g
- Almond flour x 100g
- Baking powder x 1 tsp
- Cardamon x 1 tsp
- Ground ginger x 1 – 2 tbsps
- Dried rose petals x 2 tsp
- Butter x 150g
- Maple syrup x 150g
Method
- Take the butter from the fridge a couple of hours before making this recipe to let it soften.
- Put the gluten free oats, rice flour, almond flour baking powder, cardamon, ginger and dried rose petals into the blender.
- Blender all of these ingredients together until a fine flour is formed.
- While the ingredients are in the blender you may need to push them around the cup with the spatula the blender comes with.
- It will help to move and blend the ingredients.
- Once you have made a flour set these ingredients to one side.
- Put the butter and maple syrup into another mixing bowl.
- Cream these ingredients together using the electric whisk.
- Fold in the flour made earlier by pouring it into the bowl with the creamed butter.
- Keep folding these ingredients together until they form a dough ball.
- Spread the extra brown rice flour or plain flour across the board you are using to roll out the dough.
- Roll out the dough to about a half centimetre thickness.
- Use the cutter and make your biscuits.
- Put the cut biscuits onto the chopping board and place into the fridge for 30 minutes.
- Meanwhile preheat the oven to 180°C or gas mark 4.
- After 30 minutes remove the biscuits from the fridge.
- Place on the baking tray and bake for around 10 – 12 minutes or until golden brown.
- Finally place on a cooling rack and leave to cool.

Cardamon, Ginger and Rose Biscuits / Cookies were so tasty. They are easy to prepare and cook and they will last about two weeks if stored in an airtight container. They make a brilliant gift for friends and relatives. As I said Howard, my lover didn’t turn his nose up at a jar of these cookies.
