
My son Ted, who is now 11, has never really enjoyed his vegetables. To be honest, it can be challenging to know what to feed him. Also I have been actively encouraging him to eat more greens. Although this can prove to be a challenge as well. The only way to help Ted to eat greens is if he doesn’t know he their in his dinner.
A pizza omelette is one of the best ways to hid greens. We have eaten this meal lots in recent months so I decided to turn the pizza into a monster quiche. As Halloween is on the way I thought it would the perfect time to see if my little monster would eat a quiche monster. Oh my gosh, it worked and my Ted monster ate the lot.

Serves 2 – 4
Equipment
- Saucepan
- Blender
- Cling film
- Chopping board
- Rolling pin
- Quiche tin with removable base
- Grease proof paper
Ingredients
- Almond flour x 150g
- Tapioca starch x 55g
- Salt x 1/2 tsp
- Unsalted butter, ghee or coconut oil x 55g
- Egg x 1 large
Method
- Remove the base from the quiche tin and draw around it.
- Cut a circle of grease proof paper for the tin.
- Place the grease proof paper into the tin and set to one side.
- Put the small saucepan onto a medium heat on the hob.
- Place the butter, ghee or coconut oil in and melt it until it’s a liquid.
- Remove from the heat and set aside.
- Place the almond flour, tapioca starch, salt, melted butter, ghee or coconut, and the egg into the food processer.
- Blend these ingredients together until they form a dough ball.
- Wrap in the ball in cling film.
- Put the pastry into the fridge for a good couple of hours or overnight.
- Remove 30 minutes before using the pastry.
- Spread extra tapioca starch over the chopping board and roll out the pastry.
- Once the pastry is rolled out place the quiche tin over the top to see if it will cover the base and the sides of the tin.
- If not keep rolling out the pastry until it does look like it will cover the tin.
- Carefully pick up the pastry and cover it all over.
- It may break apart but you can easily glue it together.
- When the pastry cover the base and the sides as evenly as possible set to one side.
- Roll any leftover pastry out and turn into a Halloween face for the top of the quiche.

Ingredients
- Eggs x 2 – 4
- Mozzarella x 1 ball
- Cheddar cheese or parmesan x 50g
- Parma ham x 2 – 4 slices
- Tomato puree x 2 tbsps
- Pesto x 3 – 4 tbsps
- Salt and pepper to taste
Method
- Preheat the oven to 180°C or gas mark 4.
- Crack the eggs into the bowl.
- Cut the mozzarella ball into pieces.
- Grate the cheddar cheese or parmesan.
- Slice the Parma ham into thin strips.
- Add these ingredients to the bowl.
- Put the tomato puree, pesto and salt and pepper to taste in too.
- Whisk all of these ingredients together.
- Pour this into the pastry.
- Add the Halloween face to the top of the quiche.
- When the oven has preheated place the quiche in and put any extra party next to it.
- Bake for about 25 – 30 minutes or until it’s golden brown on top.
- Then serve with beans or salad.
- Finally enjoy.

Monster Pizza Quiche was a huge hit at our Halloween table. My husband Howard and son Ted loved it. It was slightly time consuming to prepare but it was very easy to cook. All of the ingredients in this quiche are freezable so you could make it in advance of a meal an freeze it for another occasion. Howard and Ted ate this with beans but you could have it with salad too. It would also make a great snack at a Halloween party table and it makes great leftover too.
