
A traditional fry up in the UK will contain a thick slice or two of white bread or toast. Sadly I can no longer eat bread so I like to create my own versions of something to soak up the yolk. I do enjoy a smaller version of our traditional fry up on Christmas morning. Nowadays I can’t eat the bread. Therefore I’m always trying a variety of bread alternatives.
This Christmas I have decided to make these savoury oat pancakes and bake them in the oven as one large sheet pancake. I just finished my rehearsal version and they were so tasty. Of course, I had to share the recipe with you. Below is a video and recipe for you.

Serves 4
- Blender
- Bowl with lid
- Teaspoon
- Whisk
- Mixing bowl
- Stirring spoon
- Grease proof paper
- Baking sheet
- Frying pan
Ingredients
- Gluten free oat flour x 200g
- Ground flax seed x 3 – 4 tablespoons
- Pumpkin seeds x 3 – 4 tbsp
- Dried mixed herbs x 2 tsp
- Garlic powder x 2 tsp
- Baking powder x 1 tsp
- Almond protein powder x 100g
- Eggs x 2
- Milk x 400 – 600mls
- Salt x 1 tsp
- Parma ham x 8 slices
- Eggs x 8
Method
- Blend the oats to turn it into flour if necessary.
- Put the oat flour into the large mixing bowl.
- Add in the ground flax seed, pumpkin seeds, dried mixed herbs, garlic powder, baking powder, almond flour and salt.
- Mix these ingredients together.
- In a separate bowl add in the eggs and milk.
- Whisk these ingredients together.
- Once whisked pour into the flour bowl and mix everything together.
- Store in a bowl with a lid overnight in the fridge.
- If not overnight then at least 2 hours.
- When the batter mix has chilled in the fridge remove it.
- Preheat the oven to 180°C or gas mark 5.
- Pre-line a baking sheet with a scrunched up piece of grease proof paper.
- Oil the base of the baking sheet.
- Flatten the grease proof paper.
- Place the paper on the sheet.
- Then oil the top of the grease proof paper.
- Pour over the batter mix and spread it as evenly as possible across the sheet.
- Once the oven has preheat place the baking sheet into the oven.
- Bake for about 15 – 20 minutes or until it’s golden brown on top.
- When the pancake is in the oven place a frying pan onto a high heat on the hob.
- Add oil to the base.
- When the pan is hot add in the Parma ham and fry until the fat turns golden.
- Remove from the pan and add extra oil if necessary.
- Next fry the eggs until crispy under neath.
- Remove the pancake from the oven and cut into 8 slices.
- Then serve with the Parma ham and eggs and maybe a few grilled tomatoes.
- Finally enjoy.

Oven Baked Savoury Oat Pancake Fry Up were so yummy. I ate mine with fried Parma Ham and eggs. All the ingredients are freezable so you could make these in advance of a meal and freeze them for another occasion. They were yummy as part of a small fry up but you could make these into turkey sandwiches too. I really enjoyed the breakfast and if filled me up until lunch.
