
Golden, crispy on the outside and tender on the inside, these potato pancakes are comfort food at its best. - Potato peeler
- Grater
- Large mixing bowl
- Cheese cloth or clean towel
- Tablespoon
- Small bowl or cup
- Teaspoon
- Frying pan

Ingredients
- Potatoes x 600 – 800g
- Tapioca starch x 1- 11/2 tbsps (start with 1, add more if needed) or plain flour x 2 – 3 tbsps
- Egg x 1 large
- Onion x 1
- Salt x 1 – 2 pinches
- Black pepper to taste
- Oil for frying
Method
- Peel and coarsely grate the potato.
- If you like extra-crispy pancakes, grate them a bit finer.
- Peel and thinly slice the onion.
- Put the grated potatoes and onion into a clean towel or cheesecloth and squeeze hard.
- This step matters as too much water equals soggy pancakes.
- Once most of the water has been removed add the potato and onion to the large mixing bowl.
- Next add in the tapioca starch and mix these ingredients together.
- Let the starch and potato sit for five minutes.
- After five minutes scramble the egg and add it the mixing bowl along with the dried mixed herbs, salt and pepper to taste.
- Mix these ingredients together.
- Heat the frying pan over medium to high heat with enough oil to coat the bottom.
- Scoop spoonfuls of the mixture into the pan and flatten into thin pancakes.
- Fry 2–4 minutes per side until deep golden and crisp.
- Transfer to a paper towel.
- Sprinkle with a little extra salt while hot.
- Then serve and enjoy.
