Chocolate Porridge Protein Pancakes

It’s Easter week and I’m sharing one of my NEW favourite cosy breakfast recipes, Chocolate Porridge Protein Pancakes 🍫🥞 These fluffy pancakes combine comforting oats with rich chocolate flavour and a boost of protein, making them the perfect way to start a spring morning. They’re wholesome, satisfying, and feel just a little bit indulgent. They are ideal for a relaxed Easter breakfast or brunch. Below is a video and recipe for you.

Equipment

  • Blender
  • Teaspoon
  • Frying pan
  • Cooling rack

Ingredients

  • Oats x 50g
  • Rice protein powder x 30g
  • Raw cacao powder x 1 heaped tsp
  • Flaxseed x 5 – 10g
  • Banana x 1/2 – 1
  • Egg x 1
  • Egg whites x 100mls
  • Milk (your choice) or coconut water x 100mls (of your choice)
  • Mixed spice x 1 tsp
  • Raspberries x 2 handfuls plus extra for the topping
  • Oil for the pan preferably coconut oil

Method

  • Break the bananas and put these into the blender cup.
  • Pour in the oats, rice protein powder, raw cacao powder, flax seed, baking powder, mixed spice and banana.
  • Pour into the mixture the egg, egg whites and coconut water or milk (your choice).
  • Blend these ingredients together until they are smooth.
  • Once smooth pour the mixture into the large mixing bowl and put the lid on.
  • Leave in the fridge overnight.
  • The next day put a large frying pan onto a high heat on the hob.
  • Add coconut oil to the base and let it melt down.
  • When the pan is hot scoop the pancake mix into the frying pan.
  • The pancake will start to cook around the edges first.
  • Once it starts to dry in the middle and get bubbles in the mixture flip the pancake over.
  • At a certain point you may need to turn the heat down to a medium heat.
    • It will depend on your pan and hob.
  • Once the pancakes is cooked remove from the pan and put it onto a plate with kitchen towel underneath it.
  • Repeat the above process for the rest of the mixture remembering to add more oil to the pan if necessary.
  • Then serve with maple syrup.
  • Finally enjoy.
