
Cookies make a tasty treat or a yummy gift to give during the festive season. My little family and I are always enjoying a variety of cookie/biscuit during the year. At Christmas I make sure there’s always a batch in the cookie jar. Plus it’s nice to have them to hand in case you have visitors coming. They are a great Christmas staple in any kitchen. Equipment
- Blender
- Teaspoon
- Large mixing bowl
- Plate
- Baking tray/trays
- Cooling rack
- Air tight containers
Ingredients
- Eggs x 2 large
- Coconut or brown sugar x 150g
- Ghee, unsalted butter or coconut oil x 150g
- Vanilla extract x 1 tsp
- Almond flour x 200g
- Almond protein powder x 100g (or a protein of your choice)
- Rice flour, tapioca starch or plain flour x 100g
- Baking powder x 2 tsps
- Bicarbonate of soda x 1 tsp
- Salt x 1/2 tsp
- Chocolate chips x 150g
Method
- Crack the 2 large eggs into the food processor cup and add in the coconut or brown sugar.
- Blend until smooth.
- Add in the butter and the vanilla extract and blend until smooth again.
- Now add in the almond flour, almond protein powder. rice flour, tapioca starch or plain flour, baking powder, bicarbonate of soda and the salt.
- Blend these ingredients until the form a dough ball.
- Remove the dough ball from the blender and put it into a large mixing bowl.
- Put the chocolate chips in the bowl.
- Mix the chocolate chips and the cookie dough together.
- Dampen your hands to help the cookie dough not stick to them.
- Grab a piece of the dough and roll it in between the palms.
- Roll the dough into a ball and place on a plate.
- Keep rolling the dough until all of the mixture has been used.
- Put the dough balls in the fridge for about 25 – 30 minutes.
- Preheat the oven to 200°C or gas mark 5
- Put the baking tray/trays in at the same time.
- When the oven has preheated remove the baking trays from the oven.
- Place the dough ball onto the baking tray put back into the oven for about 8 – 10 minutes.
- Once they are a golden brown colour remove from the oven and leave to cool.
- When they have cooled store in an air tight container.
- Alternatively serve with a cup of tea or coffee.
- Then enjoy.

Blender Chocolate Chip Cookies Balls were a very tasty treat. We ate these as a sweet treat but occasionally as a dessert too. They are easy to prepare and cook. Plus they will last a little while in the cookie jar. Personally I prefer the cookies/biscuits a bit fresher and believe me they don’t last long in this house. If you are using tapioca starch or plain flour the biscuit dough is freezable. If your using rice flour you can’t freeze them as rice produces germs that be harmful to our stomachs when frozen.
