Sage and Onion Stuffing

Normally when we have a roast on the weekends I don’t make all the trimmings. As it’s nearly Christmas I have decided I’m going to make it all. That includes the stuffing too. Previously I have been reluctant too make sage and onion stuffing. Nowadays it comes in a box that’s packed with gluten. Last Christmas I decided to make my own stuffing. It was so delicious and for me, one of the best bits of the meal. This year I decided to share my recipe with you. Below is a video and recipe for you.

Equipment

  • Sharp knife
  • Chopping board
  • Frying pan
  • Large mixing bowl
  • Plate
  • Baking tray

Ingredients

  • Onion x 1
  • Honey x 2 – 3 tsp
  • Fresh Sage x 8 – 10 leaves
  • Almond flour x 150g
  • Ground flax seed x 50g
  • Eggs x 2 large
  • Milk x enough to make a dough if needed

Method

  • Peel, slice and dice the onion.
  • Slice the fresh sage leaves as well.
  • Put the frying pan onto a high heat on the hob.
  • Add oil to the base and leave to heat up.
  • Once the pan is hot add in the onions and fry until they start to soften.
  • When the onions are soft add in the honey and fry until they start to turn golden brown.
  • Add in the sage and fry for a further few minutes.
  • Remove from the heat and leave to cool.
  • In the large mixing bowl add the cooled onions and sage.
  • Then add in the almond flour, ground flax seed and eggs.
  • Mix these ingredients together and add a little milk if necessary.
  • Divide the mixture into quarters and then halves.
  • Roll the halves into balls and store in the fridge for at least 30 minutes.
  • While the stuffing balls are in the fridge preheat the oven to 180°C or gas mark 5.
  • Place the stuffing balls on a pre-lined or greased baking tray and put into the oven for about 25 – 30 minutes or until the staffing turns a golden brown colour.
  • Then remove and serve with a roast dinner.
  • Finally enjoy.

Sage and Onion Stuffing was a delicious side to have with our roast dinner. It was easy to prepare and cook. All the ingredients in this dish are freezable. So you could make the stuffing balls in advance and freeze them. Then you can defrost them and cook them before you want to eat this dinner. They are delicious with roast chicken or roast turkey too.
