
My husband Howard and son Ted are not great fans of greens. However what I have noticed is they do enjoy my homemade pesto. Especially if I add to different dishes. I have made chicken pesto noodles recently so I thought I would try it in a tuna mayo jacket potato. Ted didn’t really enjoy my tuna jacket but adding the pesto gave the dish a lot more flavour. We all enjoyed this meal so of course I had to share it with you. Below is video and recipe for you.

Serves 4
Equipment
- Baking tray
- Saucepan
- Colander
- Blender
- Large mixing bowl
Ingredients
- Tuna x 4 105g tins
- Pesto x 2 – 4 tbsps
- Eggs x 2 large
- Water x 80mls
- Olive oil x 60mls (or an oil of your choice)
- Apple cider vinegar or lemon juice x 2 tsps
- Salt and pepper to taste
Method
- Preheat the oven to 200°C or gas mark 6.
- Put a baking tray in while the oven preheats.
- Once the oven has preheated pierce the potatoes with a fork.
- Carefully remove the baking tray from the oven and put the potatoes in.
- Place the tray back into the oven and baking for 1 hour.
- While the potatoes are in the oven hard boil the eggs for 8 – 9 minutes.
- Once the eggs are cooked remove from the hob.
- Pour the hot water through a colander and add cold water to the eggs in the pan.
- Leave to cool in the cold water for 1 minute.
- Drain the cold water and crack the eggs.
- Leave to cool completely for about 10 minutes.
- Once the eggs have cooled remove the shell.
- Next pour 80mls of water into the blender cup.
- Add in the eggs, olive oil, apple cider vinegar or lemon juice and salt and pepper to taste.
- Blend these ingredients together until smooth.
- Open the tins of tuna and discard the water, oil or brine from the tin.
- Put the tuna into a large mixing bowl.
- Add in the mayonnaise and pesto.
- Mix these ingredients together.
- Once the potatoes are cooked remove from the oven.
- Leave to cool for 5 minutes.
- Slice the potatoes open and divided the mixture in the potatoes.
- Add cheese if you want too.
- Finally serve with a salad choice and enjoy.

Tuna Pesto Mayo Jacket Potato was yummy. It was easy to prepare and cook. Although cooking the potatoes was slightly time consuming. However the amount of time was worth it in the end. All the ingredients in these condiments are freezable. You could make the pesto and mayonnaise in advance. Plus this was delicious as a leftover lunch too.
