Onion and Sage Sausage Roll Wrap

These are sausage roll wraps with a festive twist. It’s everything you love about a classic sausage roll. They are savoury, herby and satisfying but wrapped up in a lighter, quicker and totally family friendly way. This is the kind of recipe that fills the kitchen with incredible aromas and it makes everyone hover around waiting for a bite. Perfect for lunch, dinner, or a cosy Christmas snack! Equipment

  • Vegetable peeler
  • Vegetable grater
  • Sharp knife
  • Chopping board
  • Teaspoon
  • Baking tray
  • Blender
  • Mixing bowl
  • Tablespoon

Ingredients

  • Onion x 1
  • Sage x 1 handful
  • Coconut or brown sugar x 2 tsp
  • Tamari or soy sauce x 2 tbsp
  • Olive oil x 1 tbsp
  • Courgette x 1
  • Salt and pepper to taste
  • Ground flax seed x 4 tbsp
  • Mince Pork x 500g
  • Wraps x 4

Method

  • Preheat the oven to 180°C.
  • Peel and slice the onion.
  • Wash the sage leaves and chop.
  • Set these ingredients to one side.
  • Put the frying pan onto a high heat on the hob and add the oil to the base of the pan.
  • Once the oil starts bubbling add in the onions and fry until they start to soften.
  • Then add in the coconut or brown sugar and the tamari or soy sauce.
  • Continue to fry the onions until they start to turn a brown colour.
  • Once they start to turn brown add in the sage and continue to fry for a further five minutes.
  • After five minutes remove from the heat and leave to cool.
  • Put the pork into the mixing bowl.
  • Peel and grate the courgette.
  • Add this to the mixing bowl.
  • Now put the ground flax seed into the mixing bowl.
  • Put the caramelised onion and sage into the bowl as well.
  • Sprinkle over salt and pepper to taste.
  • Dampen your hands under the tap so the mixture doesn’t stick to your hands.
  • Using your damp hands scrunch all the ingredients together.
  • Once everything is well mixed together divide the mixture into four even parts.
  • Wash and dampen your hands again.
  • Now take a quarter of the mixture and roll it into a sausage shape.
  • Place the sausage into the middle of the wrap.
  • Then make sure it fits across the length of the wrap.
  • Now roll the wrap around the sausage meat.
  • Put the sausage roll wrap into the fridge for a good couple of hours or overnight.
  • Preheat the oven to 200°C or gas mark 6.
  • You can cut silts into the wraps and brush them with olive oil or a little egg wash.
  • Place the wrap onto a baking tray and put into the oven for about 20 – 25 minutes or until golden brown on the outside.
  • Serve with chips and salad or beans.
  • Then enjoy.
