Chestnut, Rose and Ginger Chocolate Date Balls – Valentine’s Week

Valentine’s week is all about small, thoughtful gestures and indulgent treats made with love. These Chestnut, Rose and Ginger Chocolate Date Balls are my idea of the perfect sweet bite. It’s a rich and chocolatey, delicately floral, and gently spiced with warming ginger. Naturally sweet, beautifully balanced, and blissfully simple to make, they’re a gorgeous way to celebrate love, whether you’re sharing them with someone special or treating yourself to a little self-love. Equipment

  • Sharp knife
  • Chopping board
  • Teaspoon
  • Tablespoon
  • Food processor
  • Saucepan
  • Glass or metal bowl
  • Forks
  • Plate
  • Greaseproof paper

Ingredients

  • Dates x 150g
  • Cooked chestnuts x 150g
  • Rose essence x 1 – 2 tsp
  • Rose paste x 1 – 2 tsp
  • Honey or maple syrup x 1 tbsp
  • Coconut oil x 1 tbsp
  • Chocolate x 100g (your choice)

Method

  • Pre-line a baking sheet with a piece of grease proof paper.
  • Remove the stones from the dates and place these in the food processor.
  • Add in the cooked chestnuts, rose essence, rose petals, ground ginger, honey or maple syrup and coconut oil.
  • Blend these ingredients together until a large date ball forms.
  • Next remove the blade.
  • Dampen your hands under the tap so the mixture doesn’t stick.
  • Grab a piece of the mixture and roll into a ball.
  • Place the ball onto the pre-lined baking tray.
  • Continue until you have used up all of the mixture.
    • You may need to dampen your hands a couple of times during this process.
  • Once all the mixture has been used place the baking tray into the fridge for about 30 minutes.
  • Meanwhile, place a saucepan of boiling water on a medium heat on the hob.
  • Put the metal bowl on top of the saucepan.
  • Break up the bar of chocolate and place it into the pan.
  • Let the chocolate completely melt and the remove it from the heat.
  • Remove the date balls from the fridge.
  • Roll them in the melted chocolate and place back onto the pre-lined baking tray.
    • If you have leftover melted chocolate you can dunk the date balls back into the chocolate two or three times or until it’s all gone.
  • Place back into the fridge until the chocolate is hard.
  • Then serve and enjoy.
