Equipment
- Blender
- Airtight container
- Frying Pan
- Ice cream scoop
- Fish slice
Ingredients
- Banana x 1/2 – 1
- Rice Protein x 30g or a protein of your choice
- Coconut water, water or milk x 30 mls
- Ground flax seed x 10g
- Ground sweet cinnamon x 1 tsp
- Egg x 1
- Egg whites x 120g
- Baking powder x 1 tsp
Method
- Pour the egg whites, egg, ground flaxseed, banana, ground sweet cinnamon and coconut water, water or milk into the blender cup.
- Blend these ingredients together until smooth.
- Pour the pancake batter into an airtight container and store in the fridge overnight.
- The next day add stir in the baking powder.
- Put a large frying pan onto a high heat on the hob.
- Add coconut oil to the base and let it melt down.
- When the pan is hot scoop the pancake mix into the frying pan.
- The pancake will start to cook around the edges first.
- Once it starts to dry in the middle and get bubbles in the mixture flip the pancake over.
- At a certain point you may need to turn the heat down to a medium heat.
- It will depend on your pan and hob.
- Once the pancakes is cooked remove from the pan and put it onto a plate with kitchen towel underneath it.
- Repeat the above process for the rest of the mixture remembering to add more oil to the pan if necessary.
- Then serve with maple syrup.
- Finally enjoy.
