
This Baked Chocolate Banana Protein Pancake is about to become your new go-to. Recently I have been craving something chocolatey, comforting, and secretly good for you. So I baked this dish. It’s soft, rich, naturally sweetened, and packed with protein. Basically it’s everything you want in a cozy breakfast or post-workout treat. Best of all, it’s baked in one dish, so minimal effort, minimal mess, maximum satisfaction. Below is a video and recipe for you.

Equipment
- Blender
- Airtight container
- Baking sheet
- Fish slice
Ingredients
- Banana x 1/2 – 1
- Rice Protein x 30g or a protein of your choice
- Coconut water, water or milk x 30 mls plus extra if needed
- Raw cacao powder x 1 heaped tsp
- Ground flax seed x 10g
- Ground ginger x 1 tsp
- Ground sweet cinnamon x 1 tsp
- Ground cloves x 1 tsp
- Egg x 1
- Egg whites x 120g
- Honey x 2 tsp (optional)
- Baking powder x 1 tsp
- Coconut oil x 2 tsps
Method
- Pour the egg whites, egg, honey (optional), ground flaxseed, banana, ground sweet cinnamon and coconut water, water or milk into the blender cup.
- Blend these ingredients together until smooth.
- Pour the pancake batter into an airtight container and store in the fridge overnight.
- Preheat the oven to 180°C or gas mark 5.
- The next day add stir in the baking powder.
- You may also need to add a little extra milk or coconut water to loosen the mixture.
- Put the coconut oil in the microwave and let in melt but not cook.
- Pour the melt oil into the base of a baking sheet.
- Remove the mixture from the fridge and pour into the greased baking sheet.
- Spread the mixture as evenly as possible across the base.
- Once the oven has preheated place the sheet in.
- Bake for 12 – 15 minutes or until the pancake goes a lovely golden brown colour.
- Remove from the oven and leave to cool.
- Cut the pancake into squares and remove from the sheet.
- Then serve with maple syrup.
- Finally enjoy.
