Cheesy Fish Finger Sandwich

Now I have discovered I can eat whole meal bread again I decided to try a sandwich. My husband Howard and son Ted love a fish finger or two. A few years ago I made cheesy fish fingers which we loved. I used to make these a lot and then I stopped. Therefore I decided to revive the recipe and I made a few changes. Then I made the fish fingers into a delicious sandwich. It was a brilliant lunchtime meal that we all enjoyed.

Ingredients

  • Cod or Basa x 500g
  • Spring onions x 1 bunch
  • Carrot x 1
  • Ground flaxseed x 2 – 4 tbsps
  • Egg x 1
  • Salt and pepper to taste
  • Dried mixed herbs x 1 tsp
  • Cheese 80 grams

Method

  • Remove the tops and bottoms from the spring onions.
  • Slice the the onions into half centimetre pieces.
  • Peel and grate the carrot and set these ingredient to one side.
  • Put the cod, egg, spring onions, carrot, ground flaxseed and dried mixed herbs into the food processor.
  • Season with salt and pepper to your taste.
  • Blend the ingredients together.
  • The mixture may be a little wet but don’t worry it will harden in the fridge.
  • Divide the fish into eight parts and with your hands roll a piece of the fish mix into a finger shape.
  • Grate the cheese and then roll the fish in the grated cheese and repeat this process.
  • Do this until all the pieces of fish are covered by the cheese.
  • Put the fish fingers onto a plate and then place the fish fingers into the fridge for 2 – 6 hours or overnight.
  • Preheat the oven to 180ºC.
  • Put the fish fingers onto the baking tray on put the tray into the oven.
  • Bake the fish finger for about 20 – 25 minutes until the cheese is golden brown.
  • When the flesh of the fish pulls away easily from itself they fingers are down.
  • Remove the tray from the oven.
  • Slice the bread and spread butter it if you want to.
  • Then put the fish fingers instead.
  • Serve and enjoy.

Cheesy Fish Finger Sandwiches were a delicious dish. It a very easy meal but it is quite time consuming. The best part about this dinner is the fish fingers can be made in advance of the meal and stored in fridge. They could even be made and frozen.
