Chocolate Cashew Nut Cream

Whenever I make a cashew nut cream it’s normally always savoury. I have never really made a sweet cream before. Apart from when I make a vegan cheesecake recipe. Therefore I felt it was time to make a chocolate vegan cream. As strawberries are still in season for a short while I thought these would compliment each other well and I also decided to add the soft almond cookies as well. It was a delicious dessert that we all enjoyed and we hope you will enjoy it too.

Ingredients

  • Cashew Nuts x 150 – 200g
  • Almond milk x enough to cover the nuts (or a milk of your choice)
  • Maple syrup x 2 – 4 tbsps
  • Raw cacao powder or cocoa powder x 2 – 4 tbsps

Method

  • Soak the cashew nut in the almond milk.
  • Store overnight in the fridge.
  • Remove from the fridge and pour the contents into a blender.
  • Add in the maple syrup and raw cacao powder or cocoa powder.
  • Blend these ingredients together.
  • Pour into a serving bowl and serve with fresh fruit or my Soft Almond Cookies, Strawberry Coulis and strawberries.
  • Finally enjoy.

Chocolate Cashew Nut Cream Dessert was a yummy sweet treat. I served this dish when my mum, my cousin and her partner were here for dinner. Everyone really enjoyed it and all the plates were cleaned by the end of this sweet treat. The chocolate cashew nut cream could also be eaten with warm fruit in the winter as well.
