
Bacon and Eggs are a very common weekend breakfast in the UK. I’m sure other countries do it as well but the ‘fry up’ as it’s known here is a dish as Brits enjoy a lot. To be honest, when I thought of this recipe I wasn’t sure it was going to work. It doesn’t look that appetizing. I was a little scared to post this one as bacon and eggs is so well loved in this country.
When I finally tasted it I was certain I wanted to share it. It was like a taste explosion in my mouth. A flavour bomb went off and that was it. It’s a must have meal your Valentine is going to love. I did and so will you. Below is a video and recipe for you.

Equipment
- Saucepan
- Sharp knife
- Chopping board
- Frying pan
- Wooden spoon or stirring spoon
- Tablespoon
Ingredients
- Parma ham x 2 – 3 slices
- Spring onions x 2
- Red pepper x 1
- Quinoa x 75g
- Eggs x 2
- Tamari or soy sauce x 1 – 2 tbsps
- Spinach x 1 handful
- Measure the quinoa and put it into the saucepan.
- Place the quinoa under the tap and add water.
- Move the quinoa around in the pan.
- The water should start to discolour with the starch from the quinoa.
- Pour through the colander and repeat the process once or twice more.
- By the end of the process the water should start to look more clear.
- Put the saucepan onto the hob and pour over the bone broth, chicken stock, vegetable stock or water.
- There must be enough to cover the rice and then two centimetres above the top of where the quinoa sits in the pan.
- Sprinkle in salt to you tastes.
- Put the pan onto a high heat on the hob and put the lid on.
- Let the pan come to the boil.
- When the pan is boiling turn the heat down to a medium heat.
- Leave the pan to simmer until all of the liquid has disappeared.
- It will take a little while to cook the quinoa so please be patient.
- On my hob it takes a good 30 minutes but other hobs my be different.
- Once the liquid has disappeared remove from the heat.
- Be careful towards the end as the quinoa can sometimes stick to the base of the pan.
- Towards the end be sure to check by putting the spoon in the rice to see if there is any liquid left.
- If there is no liquid fluff it with the spoon.
- However if there is liquid put the lid back on and leave for a further few minutes.
- Continue this process until all the liquid disappears.
- Now set to one side.
- Remove the tops and bottoms from the spring onions and slice into half centimetre pieces.
- Slice the top from the pepper and remove the core and the stalk.
- Crack the eggs into a small bowl or cup and scrambled.
- Slice the Parma ham into 1 centimetre pieces.
- Set these ingredients to one side.
- Put the frying pan onto a high heat on the hob and add oil to the base.
- Once the pan is hot add the ham and fry until it starts to get colour.
- Add in the spring onions and fry until they start to soften.
- Next add in the quinoa and mix in with the other ingredients.
- Pour over the scrambled egg and mix in with the quinoa.
- Once the egg is cooked add in the spinach (optional) and the tamari or soy sauce.
- Stir these ingredients together until the spinach wilts in.
- Then serve and enjoy.

Egg and Bacon Stir Fry Quinoa was a yummy breakfast I enjoyed. I ate this one by myself and I loved it. It would make a delicious breakfast, lunch or even dinner.
