
Sausage and eggs are normally a breakfast dish in the UK. These two foods would be part of a larger meal we call a ‘fry-up’. Therefore I decided to use these ingredients in a dinner. I think this is usually associated with a Spanish meal. I’ve eaten similar dishes in a Spanish tapas bar. They have always been so tasty that I decided to recreate one at home. We loved this dinner and we hope you will too.

- Sharp knife
- Chopping board
- Deep sided frying pan
- Stirring spoon
- Teaspoon
Ingredients
- Onion x 1
- Red pepper x 1
- Courgette x 1
- Chorizo x 160g
- Tomato puree x 1 400g tin
- Chicken stock or bone broth x 200ml
- Potatoes x 600 – 800g
- Dried mixed herbs x 1 – 2 tsps
- Salt and pepper to taste
- Oil for the pan
- Eggs x 4
Method
- Preheat the oven to 200◦C or gas mark 6.
- Peel the potatoes and cut into 1 inch pieces.
- Next peel, slice and dice the onion.
- Now cut the top from the red pepper and remove the core and the stalk.
- Slice and dice the flesh of the pepper.
- Peel the courgette and grate it.
- Score a line on the chorizo with the knife and remove the skin.
- Slice the chorizo into half centimetre pieces.
- Put the frying pan onto a high heat on the hob and add oil to the base.
- When the pan is hot add the chorizo to the base of the pan and fry until the fat is released.
- It should only take a few minutes for this to happen.
- Next add in the onion and cook until it starts to soften.
- Add in the red pepper and fry for a further five minutes.
- If the pan is too hot turn the heat down and add a little water to the base to store the ingredients from sticking.
- Once the pepper starts to soften add in the courgette and fry for a further few minutes.
- Add in the tomatoes and chicken stock or bone broth and add in the dried mixed herbs.
- Stir everything together.
- Bring the pan to the boil and add in the potatoes.
- Turn the heat down and leave to simmer for 10 minutes.
- When the potatoes fall off a fork easily put the pan into the oven.
- Bake for around 25 minutes.
- After that time, carefully, using oven gloves, remove the frying pan from the oven.
- Put four wells with a spoon in these ingredients in the pan and add the eggs in.
- Place the pan bake into the oven for another ten minutes or until the eggs have turn white and the yolk is runny.
- Carefully remove, using the oven gloves again, the pan from the oven.
- Then serve with a salad, green beans or peas and enjoy.

Baked Eggs, Chorizo and Potatoes is delicious dish that is fairly inexpensive. It is slightly time consuming to make but the efforts are worth the results. The leftovers can be eaten the next day but I wouldn’t freeze it. I think this meal is better cooked from fresh. It could be eaten as a breakfast, lunch or dinner.
