
Prawns and pasta are two favourite ingredients in our house. I love to cook these two together and my husband Howard and son Ted really enjoy eating them. It’s a prefect combination for us. Plus I like make cashew nut cream cheese and using it in different dishes. It’s similar to cream cheese and it makes is a brilliant sauce for pasta. These ingredients combined with vegetables makes this dinner tasty and delicious. We loved it! Below is a recipe and video for you.

Serves 4
Equipment
- Sharp knife
- Chopping board
- Vegetable grater
- Saucepans x 2
- Mixing bowl
- Stirring spoon
Ingredients
- Cashew Nut Cream Cheese x 1/2 recipe
- Spring onions x 1 bunch
- Carrot x 1
- Yellow pepper x 1
- Spinach x 1 handful
- Prawns x 500g
- Spaghetti or pasta x 300g
Method
- Make the cashew nut cream cream as per the recipe
- Remove the tops and bottoms from the spring onions.
- Slice the onions into half centimetre pieces.
- Peel and grate the carrot.
- Cut the top from the yellow pepper and remove the core and the stalk.
- Now slice and dice the flesh.
- Put the large saucepan onto a high heat on the hob and add oil to the base of the pan.
- When the pan is hot add in the spring onions and fry until they are softened.
- Add in the pepper and fry until it start to soften slightly.
- Then add in the carrots and fry for a further few minutes.
- When all the vegetables are soft pour in the cashew nut cream cheese.
- If the prawns are not cooked add them to the sauce and cook them until the turn pink.
- If the prawns are cooked add them into the pan and remove the pan from the heat.
- Cook the pasta as per the packet instructions.
- Add the pasta to the sauce.
- Finally chop the spinach and add to the pan.
- Let the spinach wilt down.
- Then serve and enjoy.

Cashew Nut Cream Cheese Prawn Pasta is a yummy dish that we really enjoyed. It was easy to prepare and cook. You could make the cream cheese in advance and freeze it for the occasion. All the ingredients in the cream cheese are freezable. I ate the leftover the next day for this meal and they were yummy too. However you decide to eat this meal, as always, please enjoy.
