
There are times when I miss dairy. I used to love creamy sauces especially with spices in. Nowadays I don’t tend to eat anything with dairy in. I prefer to make a cashew nut cream cheese and I use it as a replacement in a lot of different recipes. It’s delicious in all of the recipes and it’s yummy in this one too. It adds enough creaminess without the taste of nuts. When mixed with the BBQ pasta I don’t think you can tell the difference to cream cheese. Let you know what you think! Serves 4
Ingredients
- Sharp knife
- Chopping board
- Vegetable grater
- Large saucepan
- Stir spoon
- Tablespoon (tbsp)
Ingredients
- Chicken breasts x 500g
- Cashew nut cream cheese x 100g recipe
- Onions x 1
- Carrot x 1
- Celery x 1 stick
- Tomatoes x 1 400g tin
- BBQ sauce x 2 tbsps (I use doctor Wills)
- Coriander x 1 handful
- Spinach x 1 handful
- Salt and pepper to taste
- Oil for the pan
Method
- Peel, slice and dice the onion.
- Next peel the carrot and grate it.
- Slice the celery thinly.
- Set these ingredients to one side.
- Cut the chicken into 1 inch pieces.
- Put the large saucepan onto a high heat on the hob and add oil to the base of the pan.
- When the pan is hot add in the onion and fry until it starts to soften.
- Once the onion is soft add in the celery and fry for a further 5 minutes or so.
- Or until the celery starts to soften.
- Add in the grated carrots and fry for a further minute or so.
- If the pan gets to hot turn the heat down and add a little water to stop the ingredients from sticking to the base.
- Add in the chicken and fry until golden brown.
- Pour over the BBQ sauce and fry until all the ingredients are covered in the sauce.
- Now pour over the tomatoes and bring all the ingredients to the boil. .
- Turn the heat down and add in the cashew nut cream cheese.
- Make sure to stir these ingredients occasionally to stop food from sticking to the base of the pan.
- Leave to simmer while the pasta is cooked as per the packet instructions.
- Once everything is cooked slice the spinach and coriander and add to the base of the pan.
- Stir it round while letting the spinach wilt down.
- Add the pasta to the sauce and mix in with the sauce.
- Then serve and enjoy.

Creamy BBQ Chicken Pasta was a yummy dish that we all really enjoyed. It was an easy meal to prepare and cook. All the ingredients in the sauce are freezable. Therefore you could make this dish at the weekend and then heat it up during the week. Also you could make double of the dish and freeze it for another occasion.
