Pancake Burgers (Video Version)

Pancake Burger

Now I know pancakes and burgers aren’t really mean’t to go together. Plus the British who read this blog will probably be wondering why this post is not published on Pancake Day. Well, I have a slight gluten intolerance and I’m always looking for an alternative to bread rolls. I decided to try pancakes instead. Normally I eat my burger plan but the pancakes made a tasty change. Of course I had to share the recipe with you. Below is a video and recipe for you.

Equipment

  • Mixing bowls x 2
  • Whisk
  • Frying pan
  • Teaspoon
  • Vegetable grater
  • Tablespoon
  • Baking

Ingredients for Pancakes

  • Almond flour x 200g
  • Tapioca starch x 100g
  • Eggs x 2 large
  • Milk x 300ml
  • Baking powder x 1 tsp
  • Salt x 1 tsp
  • Oil for the pan

Method for pancakes

  • Put the almond flour, tapioca starch, eggs, milk, baking powder and salt into a large mixing bowl.
  • Mix all the ingredients together.
  • Place the mixture in the fridge for at least a couple of hours or preferably over night.
  • When you are ready to cook the pancakes put the frying pan on a high heat.
  • Add a little olive oil.
  • When the pan is hot, add a scoop or two of the pancake mixture.
  • Once the pancake starts to cook around the outside, it can be flipped over.
  • Leave it to cook and then turn again.
  • When the pancake is golden brown remove from the pan.
  • Repeat this process with the rest of the pancake mixture.
  • It will make a lot of pancakes but you can freeze these pancakes.
  • Then defrost them if and when you want this dish again.

Ingredients for the burgers

  • Mince beef x 500g
  • Carrot x 1
  • Ground flax seed or breadcrumbs x 4 – 8 tbsps
  • Tamari or soy sauce x 2 tbsp
  • Dried mixed herbs x 1 tsp
  • Salt and pepper to taste

Method for the burgers

  • Peel and grate the carrot.
    • I like to use a fine grater for this task as it makes the burger very moist.
  • Add the grated carrot to the bowl along with the mince beef.
  • Next add the tamari or soy sauce, ground flax seed and salt and pepper.
  • Dampen your hands under the tap.
  • Using your hands, scrunch all the ingredients together.
  • You may need to dampen your hands again during this process.
  • Divide the mixture as evenly as possible into quarters.
  • Grab a quarter and make a burger shape with your hands.
  • Put the burger onto a plate and put a dimple in the middle of the burger.
  • The dimple will stop the burger from rising too much when it’s cooking in the oven or on the grill.
  • When all the burgers are made store in the fridge for at least two hours or overnight.
  • Preheat the oven to 180ºC and add the tray at the same time.
  • Once the oven has preheated carefully remove the tray from the oven and put the burgers in.
  • The cold burgers will hit the hot baking tray and hopefully become juicy and tender.
  • Let them cook for 25 – 30 minutes and remove once browned on the outside.
  • Put the pancakes and burgers together.
  • Then serve with chips and salad or a side of your choice.
  • Finally enjoy.
Pancake Burger

Pancake Burgers were delicious. They were slightly time consuming to prepare and cook. The end result was scrummy. If you haven’t got a lot of time the pancakes could be made and stored in the freezer for another occasion. The burgers could also be made in advance and stored in the freezer. The pancake burger also made delicious leftover the next day too. However you decide to eat this burger, as always, please enjoy. Thank you. xxx
