Double Chocolate Chip Pancakes

Although there will be a lot of chocolate in a few weeks time with Easter on the way I still can’t resist a chocolate pancake or two. I have made these before for my little family but last time I added the chocolate chips to the pancake batter.

The chips melted and the pancake mix was slightly too wet to cook into a pancakes. I have since learned my lesson and I now add them while the pancake is cooking on the first side. This is what I enjoy most about cooking, I’m learning as I go. Plus this made a really delicious breakfast too!!! Below is a video and recipe for you.

Equipment

  • Blender
  • Teaspoon
  • Large mixing bowl
  • Frying pan or pans
  • Ice cream scoop
  • Fish slice
  • Cooling rack
  • Gluten free oats x 200g
  • Almond flour protein x 120g
  • Cashew nuts x 60g
  • Ground flax seed x 20g
  • Chia seeds x 20g
  • Hemp seed x 20g
  • Pumpkin seed x 20g
  • Sunflower seed x 20g
  • Ground sweet cinnamon x 1 tsp (optional)
  • Baking powder x 1 tsp
  • Coconut water or water x 600 – 800mls (maybe more) plus extra for the next day
  • Bananas x 2
  • Honey to serve

Method

  • Pour the coconut water into the blender cup.
  • Add in the gluten free oats, cashew nuts, almond protein powder, ground flax seeds, chia seeds, hemp seeds, pumpkin seeds, sunflower seeds, ground sweet cinnamon and baking powder.
  • Peel the bananas and roughly break them up in your hands.
  • Put the pieces into the blender.
  • Blend these ingredients together until smooth.
  • Either put in the fridge overnight or begin to cook.
  • Put the frying pan on a high heat and add a little coconut oil.
  • When the pan is hot, add a scoop or two of the pancake mixture.
  • Once the pancake starts to cook around the outside add in the chocolate chips to the remaining mixture in the middle of the pancake.
  • Then it can be flipped over.
  • Leave it to cook and then turn again.
  • It should take about 2 minutes on the first side and about 30 seconds on the other side.
  • When the pancake is golden brown remove from the pan.
  • Repeat this process with the rest of the pancake mixture.
  • Once all the pancakes are cooked, serve with maple syrup and enjoy.

Double Chocolate Chip Pancakes were so tasty. These were fairly easy to prepare and cook. Although they were slightly time consuming. They are also freezable depending on what protein powder is used in the batter. Rice protein powder is not good frozen. You could make a big batch and freeze them for another occasion. They kept for a day in the fridge after they were cooked too. So they made a great leftover breakfast too. However you decide to eat these pancakes, as always, please enjoy. Thank you xxx
