
Almost 10 years ago I discovered I had a gluten allergy. Ever since I’ve been looking for healthy alternatives to bread. I have even been looking for a substitute to gluten free bread. Over the years I’ve made quite a few different recipes. In recent weeks I’ve discovered that baked lentils are a great gluten replacement too.
As Easter is nearly upon us I thought this would make a delicious breakfast for the weekend. We have eggs every Easter for breakfast during this period. It’s a family tradition I’m pleased to say I’ve upheld. This year I thought I would try and make a lentil pancake. It’s delicious and tastes like bread. It’s another brilliant alternative for me. Serves 1 – 2
Equipment
- Grease proof paper
- Baking tray
- Blender
- Teaspoon
- Frying pan
Ingredients
- Red lentils x 75 – 150g
- Water x 150 – 250mls
- Baking powder x 1 tsp
- Salt x 1 pinch
- Dried mixed herbs x 1 – 2 tsp
- Parma ham x 2 slices
- Eggs x 2
- Avocado x 1/2 – 1
Method
- Preheat the oven 180°C or gas mark 5.
- Pour oil into the base of a small baking tray or muffin tray.
- Spread the oil as evenly as possible across the base of the tray.
- Scrunch up a piece of grease proof paper and then spread it across the base of the tray.
- Then spread that oil across the base of paper and around the side.
- Set to one side.
- Next pour the water into the blender cup.
- Now add in the lentils, baking powder, salt and dried mixed herbs.
- Leave to stand for 2 – 3 minutes.
- Blend of of these ingredients together.
- Pour the mixture into the tray and put into the oven for 15 – 20 minutes or until golden brown.
- Remove from the oven and leave to cool.
- Put a frying pan onto a heat heat and add oil to the base.
- Once the pan is hot add in the Parma ham and cooked until golden brown on both sides.
- Remove from the pan and add a little more oil if necessary.
- Crack the eggs and fry until the eggs are white.
- Carefully remove the pancake from the tray and place onto the plate.
- Cut the avocado and spread across the pancake.
- Next add the Parma ham and eggs.
- Then serve and enjoy.

Baked Lentil Pancake Breakfast was so yummy. It was very easy to prepare and cook. The dish made a yummy breakfast or it can make a tasty lunch or dinner. Plus the pancake could be eaten with soups, stews and curries as well. All the ingredients could be frozen and eaten with another meal. However you decide to eat this meal, as always, please enjoy.
