
My son Ted who is eleven absolutely loves noodles but he’s not so keen on pesto. When I suggested this meal he wasn’t sure. Ted isn’t really a fan of green food. I would have called this meal ‘Hulk’ food but Ted would think it’s lame. Instead I called it what it resembled and Ted almost ate the lot. During the meal he told me loved this dish. Then he asked if we could have it again soon. I’ll take that as a success and of course I’ll be making it again. SOON!!!

Serves 4
Equipment
- Chopping board
- Baking tray
- Saucepan
- Colander
- Large spoon and fork
Ingredients
- Chicken breasts x 500g
- Parma ham x 4 – 8 slices
- Pesto x 1 recipe
- Noodles x 300g
Method
- Preheat the oven to 200°C or gas mark 6.
- Wrap the Parma ham around the chicken breasts.
- When the oven has preheated oil the baking tray and put the wrapped chicken in.
- Place the baking tray in the oven and bake for 25 – 30 minutes or until the juices run clear.
- While the chicken is in the oven make the pesto.
- Once the chicken has cooked remove for the oven and leave to rest for 5 minutes.
- Now the chicken is resting cook the noodles as per the packet instructions.
- Drain the noodles and leave them in the colander.
- Put the pesto into the noodle sauce pan and put the noodles on top of the pesto.
- Toss the noodles in the pesto.
- Then serve and add the chicken on top.
- Finally enjoy.

Chicken Pesto Noodles were so good. It was an easy dish to prepare and cook. The pesto could be made in advance and frozen until it needs to be eaten. Plus the chicken could be cooked the day before as well. Then stored in the fridge overnight. I use brown rice noodles so I wouldn’t freeze this dish. Personally I think noodles taste better cooked fresh. However you decide to eat this meal, as always, please enjoy. Thank you xxx
