Mary Rose Prawn Jacket Potato

Prawns are one of the last fish my son Ted who is eleven will now eat. I always knew this day would happen but I wasn’t sure when it would. Nowadays to have a fish meal with Ted it must be prawns. We also can’t really have the same meal more than once or twice. Therefore I’m always in my kitchen planning the next prawn meal to try. Thankfully this one ticked everyone’s boxes. We all loved it and we hope you will too.

Equipment

  • Baking trays x 2
  • Saucepan
  • Colander
  • Blender
  • Large mixing bowl
  • Stirring spoon
  • Knife

Ingredients

  • Sweet potato or potato x 4 large
  • Uncooked or cooked prawns x 500g
  • Eggs x 1 large
  • Water x 80mls
  • Olive oil x 60mls (or an oil of your choice)
  • Apple cider vinegar or lemon juice x 2 tsps
  • Tomato ketchup or puree x 2 tbsps
  • Mild chili powder x 1 tsp
  • Cayenne pepper x 1 – 2 pinches or more if you like it spicy.
  • Salt and pepper to taste

Method

  • Preheat the oven to 200°C or gas mark 6.
  • While the oven preheats put the baking into the oven.
  • Once the oven has preheated put the jacket potatoes into the oven.
  • Bake for an hour or until the skin is crispy and the inside is soft.
  • While the garlic is cooling hard boil the eggs for 8 – 9 minutes.
  • Once the eggs are cooked remove from the hob.
  • Pour the hot water through a colander and add cold water to the eggs in the pan.
  • Leave to cool in the cold water for 1 minute.
  • Drain the cold water and crack the eggs.
  • Leave to cool completely for about 10 minutes.
  • Once the eggs have cooled remove the shell.
  • Next pour 80mls of water into the blender cup.
  • Add in the eggs, olive oil, apple cider vinegar or lemon juice, tomato ketchup or puree, mild chili powder, cayenne pepper and salt and pepper to taste.
  • Blend these ingredients together until smooth.
  • Before the jacket potatoes have finished in the oven cook the prawns.
  • You can fry the prawns in a large frying pan or put them into another baking tray and bake them in the oven.
  • They will both take around 5 – 6 minutes to cook depending on your oven.
  • Once the prawns have turned pink they are cooked.
  • Remove from the oven or frying pan and transfer to the mixing bowl.
  • Pour over the Mary Rose sauce and mix together.
  • Remove the jacket potatoes from the oven.
  • Cut the jackets open and evenly spoon the prawns over the jacket potatoes.
  • Then serve with salad or greens and enjoy.

Mary Rose Prawn Jacket Potato was a great dish. It was slightly time consuming but the efforts were worth the results. Plus it was easy to prepare and cook. The ingredients in the Mary Rose sauce could be made and frozen for another occasion. As for the prawns personally I think they are better cooked fresh or just defrosted if already cooked. You can just add them to the sauce on the day. The dish also made yummy leftovers the next day too. However you decide to eat this dish, as always, please enjoy. Thank you xxx
