
When I lived at home my Dad would cook the evening meal every night. On a Friday he would always buy cold foods from the supermarket and put a meal together. I used to love these meals. Nowadays I like to eat foods I’ve cooked from fresh. Therefore I decided to make a dad style Friday night dinner. It was so delicious that of course I had to share the recipe with you.

Serve 4
Equipment
- Sharp knife
- Chopping board
- Potato peeler
- Large saucepan
Ingredients
- Gammon x 1 recipe
- Potatoes x 800g (Maris Piper potatoes are preferred)
- Homemade garlic mayonnaise x 1 recipe
- Cooked beetroot x 1 packet
- Cucumber x 1/2
- Cherry tomatoes x 20
Method
- Peel and slice the potatoes into 1 inch pieces.
- Put a large pan of cold water onto the hob.
- Add the potatoes to the pan and a pinch of salt.
- Turn the hob onto high and bring the pan to the boil.
- Next turn the heat down and leave to simmer for 10 – 15 minutes.
- Once the potatoes are fork fall drain them through a colander.
- Leave to cool.
- Make the garlic mayonnaise.
- Slice the ham, beetroot, cucumber and tomatoes in half.
- Put the cooked potatoes into a bowl and pour over the mayonnaise.
- Mix these ingredients together.
- Then serve these foods onto board or plate.
- Finally enjoy.

Gammon Ham and Potato Salad was a lovely meal. I made the ham the day before so all I had to do was make the potato salad. You could make the ham and keep it in the fridge overnight Or you could freeze it for another occasion. Personally I would make the potato salad from fresh. Then just simple serve and enjoy.
