Chopped Gammon and Pesto Sandwich

In recent years sandwiches have not really been on my menu. Nowadays at lunchtime I enjoy eating gluten free pasta with leftover meat. Recently I’ve been noticing chopped sandwiches on my social media pages. As I love trying new foods I really wanted to try this recipe. I decided to bake chickpea flour wraps as a bread alternative. Then I gave this delicious sandwich a go. It made a scrummy change from pasta and I’ll definitely be eating this one again soon.

Equipment

  • Chopping board
  • Sharp knife
  • Spoon
  • Mixing bowl
  • Spoon
  • Serving plate

Ingredients

  • Gammon ham x 20 – 30 g
  • Baked chickpea flour wraps x 1 recipe
  • Lettuce x 1 head
  • Avocado x 1/2
  • Tomatoes x 6 – 8
  • Cucumber x 1/4
  • Pesto x 1 – 2 tbsps
  • Salt and pepper to taste

Method

  • Place the gammon ham, lettuce, tomatoes, cucumber and salt and pepper to taste onto a chopping board.
  • Remove the stone from the avocado, if you haven’t already and scoop out the flesh with the spoon.
  • Put the avocado onto the chopping board too.
  • Next using the sharp knife chop the ingredients into small pieces.
  • Once everything is well chopped place into a large mixing bowl add in the pesto.
  • Mix these ingredients together until the pesto is well mixed in.
  • Cut the chickpea flour wrap in half and spread the mixture on one side.
  • Place the other half on top and cut the sandwich in half.
  • Then serve and enjoy.

Chopped Gammon and Pesto Sandwich was yummy sandwich. It was easy to prepare and make. Plus it made a great change from my normal lunches. The sandwich filling could be made the day before and then stored in the fridge overnight. As this has lettuce in I wouldn’t freeze it. It would also make a good light dinner as well.
