Tuna Pizza Cakes

These tuna pizza fish cakes are lighter than a pizza and protein packed. Plus they are quick, simple and full of my favourite pizza toppings. I love to use tomato puree, pesto and mozzarella on my families pizzas. As I can’t have cheese so I use nutritional yeast on my fishcakes or pizza. You can use any toppings you enjoy. These are perfect for a speedy lunch, a family friendly dinner or even a meal prep. The cakes bring all the fun of pizza but without the fuss. Below is a video and recipe for you.

Tuna Pizza Cakes

Serves 4

Equipment

  • Baking tray
  • Sharp knife
  • Chopping board
  • Large mixing bowl
  • Spoon
  • Potato masher
  • Plate

Ingredients

  • Potatoes x 800g
  • Tuna x 4 105g tins
  • Pesto x 2 – 4 tbsp
  • Tomato puree x 2 – 4 tbsp
  • Salt and pepper to taste

Method

  • Preheat the oven to 200°C.
  • Pierce holds in the potato with the sharp knife.
  • Once the oven has preheated put the baking potatoes into the oven for an hour.
  • Until they are soft all the way through.
  • Remove from the oven and leave to cool.
  • When they have cooled slice the potatoes in half.
  • Scoop the flesh from the skin with the spoon.
  • Put the flesh into the large mixing bowl.
  • Discard the skins.
    • I normally give ours to the birds.
  • Then add in the tuna, pesto and tomato puree.
  • Add salt and pepper to taste.
  • Mash these ingredients together until everything is well mixed in.
  • Dampen your hands and divide the mixture into 4 or 8 equal ish parts.
  • Grab a piece of the mix and flatten it between your hands.
  • Put the cakes onto the plate.
  • Repeat the process until all of the mix has been used.
  • Slice the mozzeralla if using it and place it on the top of the cakes.
  • If using nutritional yeast sprinkle over the top of the cakes.
  • Place the plate into the fridge for 2 hours or even overnight.
  • Preheat the oven to 200°C again if you have turned it off.
  • Once the oven has preheated place the tuna cakes onto the baking tray.
  • Put the tray into the oven and bake for about 10 – 20 minutes or until the cheese has melted and the cakes are a golden brown colour.
  • Remove the cakes from the oven and serve with vegetables or salad.
  • Then enjoy.

Tuna Pizza Cakes are such a fun twist on a classic. My little family and I really enjoyed this dinner. These cakes can be made in advance of a meal and frozen too.
