Chestnut Stuffing – 24 Days of Christmas

Equipment

  • Sharp knife
  • Chopping board
  • Frying pan
  • Large mixing bowl
  • Plate
  • Baking tray

Ingredients

  • Onion x 1
  • Honey x 2 – 3 tsp
  • Dried mixed herbs x 8 – 10 leaves
  • Chestnuts x 100g
  • Almond flour x 150g
  • Ground flax seed x 50g
  • Eggs x 2 large
  • Milk x enough to make a dough if needed

Method

  • Peel, slice and dice the onion.
  • Put the frying pan onto a high heat on the hob.
  • Add oil to the base and leave to heat up.
  • Once the pan is hot add in the onions and fry until they start to soften.
  • When the onions are soft add in the honey and fry until they start to turn golden brown.
  • Add in the dried mixed herbs and fry for a further few minutes.
  • Remove from the heat and leave to cool.
  • Chop the chestnuts into small pieces.
  • In the large mixing bowl add the cooled onions.
  • Then add in the chopped chestnuts, almond flour, ground flax seed and eggs.
  • Mix these ingredients together and add a little milk if necessary.
  • Divide the mixture into quarters and then halves.
  • Roll the halves into balls and store in the fridge for at least 30 minutes.
  • While the stuffing balls are in the fridge preheat the oven to 180°C or gas mark 5.
  • Place the stuffing balls on a pre-lined or greased baking tray and put into the oven for about 25 – 30 minutes or until the staffing turns a golden brown colour.
  • Then remove and serve with a roast dinner.
  • Finally enjoy.
