Baked Spicy Lentil Pancakes

Equipment

  • Large bowl preferably with lid
  • Blender
  • Baking or sheet tray
  • Plastic brush

Ingredients

  • Red lentils x 100g
  • Rice,pea or whey protein x 30g
  • Baking powder x 1
  • Ground ginger x 1 tsp
  • Ground turmeric x 1 tsp
  • Ground fenugeek x 1 tsp (optional)
  • Salt and pepper to taste
  • Egg x 1
  • Egg whites x 100mls
  • Milk, coconut water or water x 20 – 30 ml

Method

  • Soak the lentils in the fridge overnight.
  • Before making the pancakes drain and rinse the lentils through a colander.
  • Preheat the oven to 200°C or gas mark 6.
  • To the blender cup add red lentils, rice, pea or whey protein, baking powder, ground sweet cinnamon, egg, egg whites and milk, coconut water or water.
  • Blend these together until smoothie.
  • Spread the oil across the base and around the sides of the baking or sheet tray.
  • Pour in the mixture into the tray.
  • When the oven is preheated bake for 12 – 15 minutes or until golden brown.
  • Then serve with soups, curries, stews and even salads.
  • Finally enjoy.
