Cheesy Almond Biscuits

There’s something irresistible about a biscuit that breaks the rules a little. These Cheesy Almond Biscuits are crisp, savoury, and wonderfully moreish, with the nutty richness of almonds perfectly balanced by sharp, melty cheese. They’re the kind of bake that feels equally at home alongside a cup of tea, on a cheeseboard, or nibbled straight from the tin when no one’s looking. Simple to make but full of flavour, this recipe is proof that biscuits don’t always have to be sweet to be special. Below is a video and recipe for you.

Equipment

  • Large mixing bowl
  • Fine grater
  • Teaspoon
  • Stirring spoon
  • Grease proof paper
  • Rolling pin
  • Biscuit cutter
  • Baking tray/trays

Ingredients

  • Almond flour x 120g
  • Tapioca Starch x 40g
  • Red Leicester or a strong cheese x 100g
  • Salt x 1 – 2 pinches
  • Paprika x 1 tsp
  • Water 60 – 80mls

Method

  • Finely grate the cheese and place in the large mixing bowl.
  • Add in the almond flour, tapioca starch, Red Leicester or a strong cheese, salt and paprika.
  • Mix these ingredients together.
  • Add in a small amount of water and bring the ingredients together.
  • Keep adding the water slowly until a dough ball forms.
  • Put a piece of grease proof paper on a flat surface.
  • Place the dough ball on the paper and put the second piece on top.
  • Roll the dough between the two pieces of paper until it’s very thin.
  • Cut the biscuits using the biscuit cutter until all the dough has been used.
  • Place the biscuits onto a pre oiled baking tray/trays.
  • Put the trays into the fridge for 30 minutes or more.
  • Preheat the oven to 180°C or gas mark 5.
  • Remove the trays from the oven and put them into the preheated oven for 10 – 15 minutes.
  • When they are golden brown remove from the oven and leave to cool completely.
  • Store in an airtight container or serve.
  • Then enjoy.
