BBQ Cottage Pie

BBQ Cottage Pie

Fire up your comfort food cravings because this BBQ Cottage Pie is a smoky, saucy twist on a classic we all know and love. It’s think rich minced beef simmered in bold BBQ flavours, topped with fluffy, golden mashed potatoes and baked until irresistibly bubbling. Tp be honest it’s the kind of dish that feels like a hug but with a little backyard BBQ attitude.

Equipment

  • Sharp knife
  • Chopping board
  • Vegetable peeler
  • Saucepans x 2
  • Stirring spoon
  • Colander
  • Potato masher
  • Baking dish
  • Slotted spoon

Ingredients

  • Mince Beef x 500g
  • Onion x 1
  • Carrots x 2
  • BBQ sauce x 1 – 2 tbsps (I like Dr. Wills)
  • Honey x 1 tbsp
  • Tamari or soy sauce x 2 tbsps
  • Chicken stock
  • Salt and pepper to taste
  • Oil for the pan.

Method

  • Start by peeling and slicing the onion.
  • Next peel the carrots and grate them.
  • In the small mixing bowl add the BBQ sauce, honey and tamari.
  • Mix these ingredients together and set everything to one side.
  • Drizzle the oil over the base and leave the pan to heat up.
  • Once the pan is hot add the onions and fry until translucent.
  • Add in the carrots and fry for a few minutes.
  • Now add in the mince beef and fry until it’s browned.
  • Pour over the sauce made earlier and stir these ingredients together.
  • Pour in the chicken stock, turn the heat down and leave to simmer.
  • Meanwhile peel and chop the potatoes into quarters.
  • Put the large saucepan on a high heat with water and bring to the boil.
  • Add the potatoes to the boiling water and leave to boil for 10 minutes.
  • Preheat the oven to 180°C.
  • Once the potatoes are cooked, remove them from the heat and pour into the colander.
  • Once the water is drained, return the potatoes to the pan.
  • Either add the olive oil and milk or a nob or two of butter and milk.
  • Then mash until the lumps are gone.
  • Remove the pie filling from the heat and using the slotted spoon put the meat and vegetables into the pie dish leaving the gravy in the pan.
  • Next spread the mash as evenly as possible on top of the filling.
  • Place in the oven for 25 – 30 mins or until the top is golden brown.
  • Meanwhile check on the gravy and add more stock if needed.
  • Leave it on a low heat to simmer until the cottage pie is cooked.
  • Once cooked, serve, add the gravy, vegetables and enjoy.
