Slow Cooker Honey and Mustard Chicken

There’s something wonderfully comforting about a meal that practically cooks itself! This slow cooker honey and mustard chicken is exactly that. With the perfect balance of sweetness from the honey and a gentle tang from the mustard, this dish brings bold flavour with minimal effort. Equipment

  • Jug
  • Tablespoon
  • Teaspoon
  • Sharp knife
  • Chopping board

Ingredients

  • Chicken breasts x 500g
  • Onion x 1
  • Carrots x 1
  • Green beans x 1
  • Honey x 1 – 2 tbsps
  • Yellow mustard x 1 – 2 tbsps
  • Tamari or soya sauce x 1 – 2 tsp
  • Smoked paprika x 1 tsp
  • Chicken stock x 300 mls
  • Salt and pepper to taste

Method

  • In the jug add the mustard, honey, tamari, smoked paprika, chicken stock and salt and pepper to taste.
  • Mix these ingredients together and set to one side.
  • Squash the garlic with the blade of the knife and remove the skin.
  • Slice the cloves.
  • Peel, slice and dice the onion.
  • Next peel the carrot and slice it thinly lengthways.
  • Now slice and dice the chicken breasts into 1 inch pieces.
  • Place the chicken into the slow cooker pot along with the carrots, onions, garlic, green beans and the chicken stock mixture made earlier.
  • Stir these ingredients together.
  • When everything is well stirred in put the lid on the pot.
  • Place the pot onto high for 2 – 3 hours or on low for 5 – 6 hours.
  • Leave enough time before the pot finishes cooking to cook a side of choice.
  • Then serve and enjoy.
