
My delicious Jamaican Prawn Curry is Bursting with bold Caribbean flavour 🌶️🍤. It’s a vibrant dish packed with warming spices, juicy prawns, and rich coconut goodness that brings a taste of the islands straight to your kitchen. Below is a video and recipe for you.

Serves 4
Equipment
- Sharp knife
- Chopping board
- Large saucepan
- Teaspoon
- Stirring spoon
Ingredients
- Uncooked prawns x 500g
- Onion x 1
- Red pepper x 1
- Courgette x 1
- Garlic x 3 cloves
- Ground ginger x 1 tsp
- Ground turmeric x 1/2 tsp
- Mild or hot chili powder 1 – 2 tsps
- Chili x 1 (optional)
- Coconut cream x 200mls
- Chicken stock x 200mls
- Salt and pepper to taste
- Lime x 1/2
Method
- Peel and slice the onion.
- Peel and slice the garlic cloves.
- Slice the top from the red pepper.
- Remove the core and the stalk.
- Now slice the flesh.
- Next peel the courgette and slice it thinly.
- Optional; slice the chili in half and remove the seeds and the stalk.
- Now slice the flesh.
- Set these ingredients to one side.
- Put the large saucepan onto a high heat on the hob and add oil to the base.
- When in the pan is hot add in the onion and fry until it starts to soften.
- Add in the garlic and fry for about 30 seconds to a minute.
- Or just until you can smell it and it starts to turn a golden colour.
- If the pan is getting to hot turn the heat down and add a little cold water to the base.
- Next add in the red pepper and fry until this starts to soft.
- It may take around 5 minutes for the pepper to soften depending on how soft you like it.
- Add the courgette in and fry for a further few minutes.
- Optional, add in the chili and fry for another few minutes.
- Sprinkle over the mild or hot chili powder, ground ginger and ground turmeric.
- Stir these into the vegetables.
- Now add in the prawns and fry until they start to turn pink.
- Once pink add in the coconut cream and chicken stock.
- Add salt and pepper to taste.
- Heat through the cream and stock and once it start to bubble remove from the heat.
- Serve with rice and greens of your choice.
- Finally enjoy.
