Lavender and Summer Fruit Crumble

My husband Howard, son Ted and I all love a crumble. I’d say it’s probably one of our favourite desserts. For us it’s best enjoyed after a roast dinner on a Sunday. I’m always trying to think of new crumble recipes to eat. We have our preferred crumbles but we also love variety.

Lavender month has really helped me to be adventurous with dishes. It’s a delicious herb that gives a very subtle flavour to a meal or dessert. The lavender in this crumble adds extra sweetness and we really enjoyed the flavours in this pudding.

Serves 4

Inside a Lavender and Summer Fruit Crumble

Equipment needed

  • Large Saucepan
  • Stirring spoon
  • Teaspoon
  • Chopping board
  • Sharp knife
  • Large mixing bowl
  • Baking dish

Ingredients

  • Mixed summer fruits x 500g
  • Cinnamon x 2 tsp
  • Lavender x 4 – 6 stalks
  • Water 50 mls
  • Coconut or brown sugar x 2 tbsp
  • Gluten free oats x 200g
  • Ground almonds x 100g
  • Coconut or brown sugar x 50g
  • Ghee, unsalted butter or coconut oil x 100g
  • Maple syrup x 50mls

Method

  • Preheat the oven to 180°C or gas mark 4.
  • Place the mixed summer fruit into the saucepan.
  • Chop the lavender stalks into small pieces.
  • Add them to the saucepan along with the cinnamon and water.
  • Sprinkle over the coconut or brown sugar.
  • Stir these ingredients together.
  • Put the pan on a high heat and bring to the boil.
  • Then turn the heat down and leave to simmer until the fruit softens.
  • It should take around 10 minutes.
  • In the large mixing bowl add the oats, almonds, sugar, ghee, unsalted butter or coconut oil and the maple syrup.
  • Using your hands mix all of these ingredients together.
  • The ingredients in the bowl will begin to resemble bread crumbs.
  • When they do set them aside.
  • Now remove the fruit from the heat and pour into the baking dish.
  • Pour the crumble topping in the large mixing bowl over the top.
  • Pat down gently with your hands.
  • Place in the oven for 25 – 30 minutes or until the crumble is golden brown and the filling is bubbling over the side a little.
  • Then serve with your favourite condiment and enjoy.
Lavender and Summer Fruit Crumble with Coconut Cream and Maple Syrup

Lavender and Summer Fruit Crumble was delicious and we all really enjoyed it. We ate it with our favourite condiment, coconut cream mixed with a little maple syrup. It’s such a nice dessert that can be eaten hot or cold. My husband had the leftovers for lunch the next day and he said it was yummy. However you decide to eat this dessert, as always, please enjoy.
