Christmas Spiced Nuts

Roasted nuts always remind me of Christmas. My Dad would always buy shelled walnuts at this time of year. I remember him sitting in front of the television on Christmas Eve or on Christmas Day with a bowl of shelled nuts. He would then sit and crack the nuts with a nut cracker. It’s an image that I quite vividly recall.

Nowadays we don’t tend to buy shelled nuts. I would be the only person to eat them and as a child I remember finding it really difficult to crack the shell from the nuts. Normally I eat nuts all year round but I do enjoy roasting them especially at Christmas.

Equipment for All 3 Ways

  • Bowl
  • Baking tray
  • Grease proof paper
  • Tablespoon
  • Teaspoon
  • Mixing spoon

Ingredients for Christmas Spiced Nuts

  • Mixed Nuts x 500 g
  • Water x enough to cover the nuts
  • Coconut oil x 2 tbsp
  • Maple Syrup x 1 tbsp
  • Brown Sugar x 2 tbsp
  • Ginger x 2 tbsp
  • Cinnamon x 2 tsp
  • Cloves x 1/2 tsp
  • Nutmeg x 1/2 tsp
  • Soak the nuts in a bowl of water for 3 – 4 hours or preferably overnight.
  • Preheat the oven to 120°C or gas mark 1/2.
  • Line the baking tray with grease proof paper.
  • Drain the excess water from the nuts.
  • Tip the nuts on the baking tray.
  • Melt the coconut oil in a pan if not liquid already.
  • Add in the maple syrup and stir these two ingredients together.
  • Pour coconut oil and maple syrup over the mixed nuts.
  • Sprinkle over the ground ginger, ground cinnamon, ground cloves, ground nutmeg and sugar.
  • Mix all the ingredients together until every nut is coated in the oil, spices and sugar.
  • Put the baking tray into the oven for 3 – 4 hours or until they are a golden brown colour.
  • Once cooked, remove and leave to cool completely.
  • Serve or store in an airtight container for later.
Sweet and Spicy Roasted Almonds

Ingredients for Sweet and Salty Cashew Nuts

  • Cashew Nuts x 150 g
  • Water x enough to cover the nuts
  • Coconut oil x 1 tbsp
  • Maple Syrup x 1 tbsp
  • Salt x 2 tbps

Method for Sweet and Salty Cashew Nuts

  • Soak the nuts in a bowl of water for 3 – 4 hours or preferably overnight.
  • Preheat the oven to 120°C or gas mark 1/2.
  • Line the baking tray with grease proof paper.
  • Drain the excess water from the nuts.
  • Tip the nuts on the baking tray.
  • Melt the coconut oil in a pan if not liquid already.
  • Pour over the nuts and add the honey too.
  • Sprinkle over the salt and and mix all the ingredients together.
  • Put into the oven for 3 – 4 hours or until they turn golden brown.
  • Once cooked, remove and leave to cool completely.
  • Serve or store in an airtight container for later.

Ingredients for Sweet and Spicy Roasted Almonds

  • Almonds x 200g
  • Coconut oil x 1 tbsp
  • Maple syrup x 1tbsp
  • Salt x 1 tsp
  • Cayenne pepper x 1 – 2 tsp
