Cashew Nut Cream Cheese, Pesto, Pasta and Fish

My son Ted and I used to love fish. It was one of our favourite meals. Nowadays Ted isn’t so keen. I still love it and I’m trying to ignite the love of this food in my son too. Therefore I’ve been trying lots of new recipes.

I’m always making cashew nut cream cheese and pesto for a variety of different meals. I had the two in the fridge so I decided to put the together with pasta, mackerel and tomatoes. I loved this dish but Ted was a little bit unsure. The saltiness of the fish with the creamy pesto, to me, worked so well. It’s definitely a meal I’ll be eating again. I’m not sure about Ted.

Equipment

  • Baking tray
  • Saucepan
  • Colander

Ingredients

Method

  • Start by making the cashew nut cream cheese as per the recipe.
  • Preheat the oven to 180°C or gas mark 5.
  • Once the oven is preheated put the mackerel onto a baking baking.
  • Add in the tomatoes around the fish.
  • Pour oil over the oil and salt.
  • Place into the oven and cook for about 12 – 15 minutes or until the fish starts to flake away from itself.
  • While the fish is cooking make the pesto as per the recipe.
  • Cook the pasta as per the packet instructions.
  • Once the fish is cooked remove from the oven.
  • The tomatoes should be hot and splitting.
  • Drain the pasta and add in the pesto and cream cheese to the empty saucepan.
  • Put the pasta onto of the sauce and mix all the ingredients together.
  • Then serve and enjoy.

Cashew Nut Cream Cheese, Pesto, Pasta and Fish was a hit with me. I really enjoyed this meal. It was very easy to prepare and cook. I had cashew nut cream cheese and pesto from previous meals. All I really had to do was through the meals together. Both the pesto and cashew nut cream cheese can be frozen and defrosted on the day of use. You can make both these sauces in advance of a meal. Also I ate this meal as leftovers the next day too and it was so yummy. However you decide to eat this dinner, as always, please enjoy. Thank you xxx
