My son Ted, who is 7, always proclaims that he hates vegetables and he doesn’t eat them. Therefore as his mother I’m always trying to play hide the veg in his food. I have found a number of ways to hide lots of different vegetables. We eat loads of veggies in soups, stews, curries and all sorts of different sauces. You name it and I have most definitely done it. Although I have never hidden veggies in cookies/biscuits before.
For me, putting carrots into a cookie mixture was a first. Ted didn’t even know they were in there. I watched as he ate them quite happily. After he had eaten his first biscuit he told me, he didn’t like them, he loved them. On Saturday night he was allowed two with his milk after dinner and he sneaked in a third when he thought my husband Howard and I weren’t looking.
Howard and I knew however, when he was in the kitchen for a lot longer than he is normally. Ted is very cheeky at times. I did tell him after a few days that there are carrots in his beloved biscuits. Ted informed me that he wouldn’t be eating them but he is still munching on the biscuits. It’s probably not the healthiest way to feed your kids vegetables but we promise the cookies are delicious. A sweet treat with a little veg in every so often is not the worst food to feed your children. We love these cookies and we hope you do too.

Makes 20 – 24 cookies/biscuits
- Nutribullet or blender
- Vegetable peeler
- Fine grater
- Mixing bowls x 2
- Mixing spoon
- Electric Whisk
- Baking tray
- Grease proof paper
- Rolling pin
- Boards for the cookies
- Large cookie cutter
- Cooling rack
- Gluten free oats x 200g
- Rice flour x 100g, plus extra for dusting
- Pecans or walnuts x 80g
- Baking powder x 1 tsp
- Coconut sugar x 150g
- Vegan butter, ghee or unsalted butter (if not vegan) x 200g
- Carrot x 1 large
- Ground sweet cinnamon or ground cinnamon x 1 tsp
- Chocolate chips x 150g
- Take the vegan butter, ghee or unsalted butter from the fridge a couple of hours before use.
- Pour the gluten free oats, rice flour and pecans or walnuts into the nutribullet or blender and blend until they form a flour.
- Mix the ground oats, rice flour, ground pecans or walnuts, baking powder, and ground sweet cinnamon or ground cinnamon in the large mixing bowl and mix together.
- Now stir in the chocolate chips and set the large mixing bowl aside.
- Peel the carrot and grate it into another large mixing bowl.
- Cut the vegan butter, ghee or butter into chunks and put into the mixing bowl too.
- Add in the coconut sugar and cream these ingredients together with the electric whisk.
- Then finally add the flour ingredients to the ingredients in the other bowl.
- Mix until they form a large ball and use your hands to do so if you need to.
- Using the extra brown rice flour, roll out the dough.
- Roll out the dough to about a half centimetre thickness.
- Use the cutter and cut your biscuits.
- Repeat the process until you have used all the dough.
- Place the biscuits onto boards and put into the fridge for about thirty minutes.
- Preheat the oven to 180°C or gas mark 4.
- Place on the baking tray and bake for around 12 – 15 minutes or until golden brown.
- Finally place on a cooling rack and leave to cool.
- Then serve with a nice cup of tea or coffee and enjoy.
Choc Chip Carrot Cake Cookies were, as you may have already guessed, a big success. Howard, Ted and I all loved these cookies. If you were looking for a slightly healthier recipe you could use raisins instead of chocolate chips. It becomes more like an authentic carrot cake with raisins. These biscuits will last for a couple of weeks when you store them in an airtight container. They make a great gift for friends and relatives. That’s if you can bare to give them away. If you can’t give these tasty treats up then the best way to enjoy them is with a nice cup of tea or coffee. However you decide to eat these cookies, as always, please enjoy. Thank you xxx
