Sweet Potato Omelette Tuna Wrap

My Sweet Potato Omelette Tuna Wraps it’s packed with protein, flavour, and simple ingredients. This recipe is perfect for anyone looking for a healthy and satisfying meal idea. Equipment

  • Vegetable peeler
  • Small mixing bowl
  • Grater
  • Frying pan
  • Mixing bowl
  • Tablespoon

Ingredients

  • Sweet potato x 80 – 100g
  • Eggs x 2 large
  • Cheese x 40g or nutritional yeast x 2 – 4 tbsps
  • Tuna x 1 tin
  • Sundried Tomato Pesto x 2 tbps
  • Rocket or lettuce x 1 handful
  • Salt and pepper to taste

Method

  • Preheat the oven to 180°C or gas mark 5.
  • When the oven is almost preheated start making the omelette wrap.
  • Hold the sweet potato in one hand and using the peeler pull down with the other.
  • Place the potato slivers into the frying pan until you have covered the base of the pan.
  • Remove the slivers and put the pan onto a high heat on the hob.
  • Add oil to the base and then carefully place the slivers in.
  • Place a lid that is smaller that the frying pan on top of the sweet potato.
  • Cooker until the potato starters to soften.
  • While the potato is softening crack two eggs into a small bowl.
  • Add in the cheese or nutritional yeast and salt and pepper to taste.
  • Scramble these ingredients together.
  • Once the potato is soft pour the egg mixture over the potatoes.
  • Spread it as evenly as you can around the base of the pan.
  • Place the frying pan into the oven and cook for around 5 – 10 minutes or until golden brown.
  • Remove and leave to cool.
  • While the wrap is cooling mix the tuna and sundried tomato pesto together.
  • Once the wrap has cool enough to touch place the tuna mayo on one end.
  • Place the rocket or lettuce in as well.
  • Roll the wrap.
  • Cut in half and serve with a salad.
  • Then enjoy.
