Cajun Spice Cottage Pie

Equipment

  • Sharp knife
  • Chopping board
  • Vegetable peeler
  • Saucepans x 2
  • Stirring spoon
  • Colander
  • Potato masher
  • Baking dish
  • Slotted spoon

Ingredients

  • Mince Beef x 500g
  • Onion x 1
  • Carrots x 1
  • Courgette x 1
  • Mild chili powder x 1 tsp
  • Smoked paprika x 1 tsp
  • Onion granules x 1 tsp
  • Garlic granules x 1 tsp
  • Dried oregano x 1 tsp
  • Tamari or soy sauce x 2 tbsps
  • Chicken stock
  • Salt and pepper to taste
  • Oil for the pan
  • Potatoes x 600 – 800g
  • Creamy cheese x 2 tbsps
  • Egg x 1

Method

  • Start by peeling and slicing the onion.
  • Next peel the carrot and the courgette and grate them.
  • Set everything to one side.
  • Drizzle the oil over the base and leave the pan to heat up.
  • Once the pan is hot add the onions and fry until translucent.
  • Add in the carrot and courgette and fry for a few minutes.
  • Now add in the mince beef and fry until it’s browned.
  • Pour in the chicken stock and tamari or soy sauce turn the heat down and leave to simmer.
  • Sprinkle in the mild or hot chili powder, smoked paprika, onion granules, garlic granules, dried oregano and salt and pepper to taste.
  • Meanwhile peel and chop the potatoes into quarters.
  • Put the large saucepan on a high heat with cold water.
  • Add the potatoes to the water and leave to come to the boil.
  • Once boiling turn the heat down and leave to simmer for 10 minutes.
  • Preheat the oven to 180°C.
  • Once the potatoes are cooked, remove them from the heat and pour into the colander.
  • When the water is drained, return the potatoes to the pan.
  • Add the egg and the cream cheese.
  • Sprinkle over salt and pepper to taste.
  • Then mash until the lumps are gone.
  • Remove the pie filling from the heat and using the slotted spoon put the meat and vegetables into the pie dish leaving the gravy in the pan.
  • Next spread the mash as evenly as possible on top of the filling.
  • Place in the oven for 25 – 30 mins or until the top is golden brown.
  • Meanwhile check on the gravy and add more stock if needed.
  • Leave it on a low heat to simmer until the cottage pie is cooked.
  • Once cooked, serve, add the gravy, vegetables and enjoy.
